I’m “training” for an 8K. It’s a really tough thing for me, starting a new routine because I’m a creature of habit. And I’m running on a treadmill because it’s so cold outside right now that my lungs would immediately freeze and I would probably pass out on the side of the road to be found later by one of my neighbors. Running on a treadmill in my basement while staring at a cinderblock wall is awesome. I love it…and struggling through that run while fueled only by Birthday Cake and cheese is equally awesome. Oh…and I forgot to mention I’m listening to a playlist created by my daughter. Totally awesome.

So, in an effort to health up and fuel my body naturally for something that seems totally unnatural to me (running) I turned to my friend….the smoothie. There was a time when I was super fit and ate healthy foods all the time. It was easy, it was my habit and smoothies made meals simple, quick and filling. I would concoct all different kinds of smoothies, mostly recipes mimicking milkshakes and pies….and cakes. Strawberry Cheesecake Smoothie, anyone? (A Pinterest favorite, by the way!)

This time, I wanted to add something more…I decided to try Spirulina which is the world’s first superfood and one of the most nutrient-rich foods you can find. This blue-green microalgae is partly responsible for producing the oxygen in the Earth’s atmosphere. I know, pretty deep. The claims are that this vitamin boosts energy, immunity, supports cardiovascular health, as well as, eye and brain health. It’s just all good in the little jar. I bought mine at Whole Foods and decided on the powder form. It seemed like it was easier to incorporate into a smoothie recipe. In addition to the spirulina, I included frozen blueberries, banana, coconut water, vanilla and agave nectar.

This is, by far, the healthiest (and scariest) smoothie I ever made. It’s color is a little scary…deep blue-green, like the part of the ocean we will never see because who really owns the proper equipment to swim to that depth. Right? Back to the smoothie, it’s rich and creamy, super filling and definitely energizing. Not like a caffeine induced energy….just a little more pep in your step and your brain. AND without the caffeine crash. The subtle coconut flavor is soothing and I literally sipped this like a milkshake about 30 minutes before my run while watching The Real Housewives of Somewhere. I don’t know which one but really,  I bet they all would love this smoothie.

Ingredients

  • 2 cups frozen blueberries
  • 1 small banana
  • 11 ounces coconut water
  • 2 tablespoons agave nectar
  • 1 tablespoon Spirulina Powder
  • 1/2 teaspoon vanilla extract

Instructions 

  • In a blender, process the blueberries, banana, coconut water, agave nectar, spiraling powder and vanilla until smooth. Pour into two glasses and serve immediately.
