I’d love to say that leftovers don’t exist in this house but the fact is…..they do. And they die a slow death in the back of the refrigerator, quickly forgotten and turning into something that looks like it was run over by a bus….smashed on the side of the road. Nice visual, I know but so is the container growing fuzz stuffed behind the old salad greens in the garage refrigerator. I hate trash day. Not because of the scary science projects I have to toss but….it’s a reminder of how much food we’re wasting. How much money we are tossing out with the trash, it’s sad and deflating.

With all the best intentions, I try to remind everyone in the house that there’s leftover Beef and Ale Stew or Homemade Chicken Soup in the refrigerator for dinner/lunch/brunch…whatever. But the truth is…nobody really wants to eat the same thing several days in a row. We want new…fresh…like a restaurant. So, I try my darndest to make sure the food gets eaten and this creation is a recipe revamp of our favorite Bolognese Sauce. It’s an oldie…one of my first recipes posted on The Suburban Soapbox but it’s always available in my freezer for quick meals. Sometimes….even if we haven’t had it in weeks….I hear groans when I proclaim that it’s pasta with bolognese night. How dare they.

That’s how this little ditty came about. Groans. Whining….sadness on their faces. First world problems. Luckily for them, I had a package of gnocchi waiting to be used in the fridge. So, I mixed the two together, threw in some spinach…you know, to make it healthy, and topped with a boatload of cheese. I successfully turned those frowns upside down. I mean, seriously, how can you not love rich, hearty bolognese sauce mixed with tender little pillows of heaven doused in melty cheese. Melty CHEESE people!!! And it took me all of 10 minutes to mix together….FOUR ingredients….and one pot to clean. Can I get a Hallelujah? High five for kitchen witchery. There will never be leftovers in the back of the fridge again. Well….I hope to cut back on the fuzzy projects at least.

One pot Baked Gnocchi Bolognese Skillet is a heavenly comfort meal for the winter months.

Ingredients

  • 3 cups leftover Bolognese Sauce or your favorite jarred meat sauce
  • 1 16- ounce package gnocchi
  • 1 1/2 cups fresh spinach
  • 1 cup Italian blend shredded cheese, Or a blend of provolone and mozzarella

Instructions 

  • Preheat oven to 425 degrees.
  • Add the sauce to a skillet and cook over medium heat until warmed through. Stir in the gnocchi and spinach. Top with the cheese and bake for 20 minutes.
  • Serve immediately.
