I’ll still be working but dinners need to be quick and easy so I’ve been scouring the internet for recipes that require little to no mess. Grilling is a huge plus! Paper plates will also be necessary and everyone can just eat with their hands. It’s cool…it’s the beach, I have no rules at the beach. Except that there will be no mess in the kitchen.

During my search for easy, grilling recipes I found this one for Country Style Ranch Grilled Chicken. It had everything I was looking for….minimal ingredients….4 to be exact. No mess, the chicken is marinaded in a zip top bag. Grillable….no dishes to clean. And healthy, because we will be baring pretty much on the beach so let’s not add to what is already there.

I used Tyson Fresh Chicken Thighs that I found at Walmart. I love chicken thighs because, even with the skin off, they stay juicy and flavorful. Plus, they’re pretty economical so everyone can get their fill without having to wrestle over the last piece of chicken. And believe me…everyone will devour these thighs because they’re simply irresistible.

In usual Soapbox fashion, I did tweak the recipe a smidge just to add a bit of flair. Just one piece of flair and that was a teaspoon of honey…you can leave it out if you want but I liked the sweetness it added to the tangy ranch seasoning. It was the perfect contrast and helped create a bit of char from the grill. If you’re watching your sugar intake then definitely skip it. Country Style Ranch Grilled Chicken would go exceptionally well with these Baked Beans or a heaping pile of Smashed Potato Salad.

Easy country style ranch chicken is perfect for grilling night!

Ingredients

  • 1 cup chicken broth
  • 1 packet, 1 ounce Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 3 pounds chicken thighs, skin removed

Instructions 

  • In a bowl, whisk the seasoning mix together with the chicken broth, mustard and honey until smooth. Place chicken thighs in a zip top bag and pour the marinade over top. Seal the bag and place in a bowl. Marinade for 1 hour or up to 24 hours in the refrigerator.
  • Preheat the grill.
  • Remove the chicken from the bag and discard the marinade. Grill the chicken about 10 to 12 minutes on each side or until juices run clear. Remove the chicken from the grill and let stand covered for 5 minutes before serving.
