I am not a planner….it’s just not in me. I’m more of a fly by the seat of my pants kinda gal and that doesn’t really bode well when the school year begins. Kids running around the house begging for food and trying to find a pair of matching socks can cause a little bit of sweat on the brow when all I want to do is get everyone out the door. With full bellies and matching socks, of course. It takes a lot for me to plan ahead and I am definitely one that needs a solid routine every day in order to not elevate the blood pressure before 7:30 am.

So, each year I follow the same back-to-school routine and it really helps to keep my sanity when getting everyone off to school. Things run a little more smoothly and everyone is calm, cool and full. The plan begins the night before. This is critical…this is when you find the matching socks. We pull everything together that’s needed for the next day…outfits are laid out so there are no wardrobe disagreements at the crack of dawn. Backpacks are packed and placed right by the door so they are within arms reach when we’re racing the clock. Breakfast decisions are made before bed so everyone is aware of what the kitchen will be serving that day. That’s when Jimmy Dean breakfast sandwiches come in handy and, usually, save the day. Ready in just a few minutes, the Sausage Egg and Cheese Croissant is hands down the favorite in our house.

We like to make the sandwich our own with a quick and easy Maple Dijon Sauce (also made the night before.) The sweet and savory flavor is a great addition to the saltiness of the sausage, creamy cheese and buttery croissant. And the extra sauce doubles as the perfect dip for an afternoon snack.

To beat the hangries when the kids walk in the door, I like to serve State Fair Corn Dogs with the leftover Maple Dijon Sauce. It’s an amazing combination with the crunchy, sweet crust on the corn dog and kids really dig it. I got a great deal on both the Jimmy Dean Sausage Egg and Cheese Croissant Sandwiches and the State Fair Corn Dogs at my local Walmart. Both are available in the freezer section and come in a variety of sizes. My little guy loves State Fair Corn Dogs so we opted for the mega box. 🙂
