Gingerbread Scones with Eggnog Glaze | The Suburban Soapbox #MeandMyTea

Only 10 shopping days left until Christmas, can you feel it? The angst and stress coming off almost every person around you at the mall? For this is the most wonderful time of the year and yet….everyone seems to be channeling their inner Grinch this year. It’s a little sad if you ask me. I love the holidays, it’s the only time of year I can decorate with a bazillion lights and throw glitter on everything and everybody around me. Including my husband. It’s the time of year when friends and family should be in each other’s lives singing carols, nibbling on peppermint bark cookies or sipping eggnog heavily spiked with bourbon. It’s the time of year to relax and enjoy the wonderful things around us….especially the glitter that will be around until June.

Those people at the mall…let’s call them the “angries”…..they need to take some time to relax. Uncle Joe is not going to lose his mind because you couldn’t find the moose mugs on his Christmas list. Aunt Joan is not going to disown you because you made a change to her “World Famous Cheesecake.” No, the world will not end….your friends and family will still come around…whether you like it or not. It’s time to take a moment for yourself before you even set foot in the mall again.

That’s exactly what I do….after an hour of playing “Who’s Spot is it Anyway” in the mall parking garage, I like to go home and take some time for myself. By myself. With a cup of tea and a tasty sweet treat, like these Gingerbread Scones with Eggnog Glaze. They’re the perfect combination of holiday spice and sweet to pair with my favorite Bigelow Salted Caramel Tea. It’s a little bit of holiday celebration all to myself and by myself, while watching some Christmas classics like National Lampoons Christmas Vacation or Elf.

These Gingerbread Scones with Eggnog Glaze are really simple to make and are a great homemade gift idea for your tea loving friend. Pair with a box of Bigelow Tea in one of their holiday flavors (I love the Salted Caramel and Pumpkin Spice) available at your local Walmart then wrap it all up with a cute holiday tea cup and some biscotti. The most thoughtful gift and a reminder to your friends or family to take a little time for themselves….just to keep their sanity in check during the holiday craziness. Because you never know when you’re going to encounter one of the “angries”.

Ingredients

  • 3/4 cup plus 1 tablespoon cold heavy cream
  • 1 large egg
  • 1/4 cup molasses
  • 2 cups all-purpose flour, plus more for work surface
  • 1/4 cup light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cloves
  • 6 tablespoons 3/4 stick cold unsalted butter, cut into small pieces
  • granulated sugar for sprinkling
  • 1/2 cup powdered sugar
  • 3 tablespoons eggnog

Instructions

  • Preheat oven to 400 degrees. In a small bowl, whisk together 3/4 cup of cream, egg and molasses. In a large bowl, whisk together the flour, granulated sugar, baking powder, ginger, cinnamon, salt and cloves.
  • With a pastry blender, cut the butter into the flour mixture until it resembles coarse meal, with a few pea-size pieces of butter remaining. With a fork, stir in the cream mixture until just combined. The dough will still be crumbly.
  • Transfer the dough to a lightly floured work surface and pat into a 6-inch circle. Cut into 6 wedges and transfer to a parchment-lined baking sheet. Brush the tops with 1 tablespoon cream and sprinkle with granulated sugar. Transfer to the oven and bake until golden, 16 to 18 minutes, rotating the sheet pan halfway through. Allow to cool on the sheet pan for 5 minutes and then transfer to a wire rack to cool completely.
  • While the scone cool, whisk together the powdered sugar and eggnog until smooth. Drizzle the glaze over the scones. Allow the glaze to set, approximately 30 minutes, before serving.
  • Store in an airtight container for up to 48 hours. Best when served the same day.
