Poached Eggs

An integral part of the brunch world, eggs reign supreme for many reasons. They’re easy to make, they’re relatively inexpensive and they’re healthy. We make them multiple times a week for breakfast but our favorite way to enjoy them is lightly poached.

This Poached Egg recipe is simple to make and almost fool-proof. It’s a great way to learn your way around the kitchen, too. Perfect for eggs Benedict or topping avocado toast, you’ll be whipping these eggs up several times a week.

Hard boiled, pickled, poached….it’s an easy way to load up on some protein and cut back on carbs. Eggs are easy, they’re tasty and if you’re into runny eggs…they’re rich and buttery.

How To Make Poached Eggs

Poached eggs were tricky for me when I was learning to cook. I tried that “whirlpool” method everyone talks about and the egg whites spun wildly out of control so I was left with a tiny little egg yolk and a pot full of, what looked like, egg white soup. My way is to leave the water still. Just slightly bubbling and add a bit of vinegar to help the egg proteins come together quickly. This is the BEST way to make poached eggs.

  1. Add about 2 inches of water to a pot.
  2. Bring the water to a boil and then turn the heat to simmer.
  3. Stir in the vinegar.
  4. Place each egg in a separate mug or ramekin.
  5. Slowly tip the egg into the water.
  6. Let the egg white begin to set and then fold the egg whites over the yolk with a spoon.
  7. Remove the egg with a slotted spoon once the egg is set.
  8. Season with salt and pepper.
  9. That’s it, so easy to make poached eggs in minutes!

How Long To Poach an Egg

One of the quickest ways to cook an egg, Poached Eggs only take about 2-3 minutes to cook once the water is to temperature. You’re going to be waiting for the water to heat up much longer than it will actually take for the eggs to cook. 

For a firmer egg yolk, poached eggs take about 4 minutes total.

Do You Need Vinegar

Vinegar helps the egg white set up quickly. If you don’t have vinegar, you can substitute with lemon juice with great results.

Ingredients

  • 1 teaspoon vinegar
  • 2 large eggs

Equipment

  • 1 saucepan

Instructions 

  • Bring about 2 inches of water to a simmer in a large pot.
  • Add the vinegar to the water and stir.
  • Crack each egg into a separate ramekin or coffee mug. When the water is still (do not boil), slowly tip the egg into the water.
  • Allow the egg to sit in the water for a few seconds to allow the white to cook, then carefully fold over the egg white making sure it doesn't stick to the bottom of the pan.
  • Once the egg yolk is set, remove the egg to a plate using a slotted spoon. Serve immediately.
