It’s Friyay!!! Yay!!! This week whizzed by…unlike the previous two weeks when the rain was never ending. Today we saw the sun, I washed my car, I sat in the sun, I wore open toed shoes and a short summer dress…summer is coming. And I’m so ready. Ready for fresh fruit and tomatoes, all the seafood, sparkling chilled beverages, lots of grilling and, of course, no cook meals. Those are the best…the dinners or snacks or lunches that you don’t have to fire up the stove or oven. The meals you can just slice and dice and toss in a bowl. Dishes like this crab salad and, of course, these Spicy Tuna Sundaes.

If you’re not a sushi fan….go check out this salmon recipe….but if you ARE a sushi lover, you’re going to flip over how easy these Spicy Tuna Sundaes are to make. I won’t lie….it took some coaxing from a friend to even get me to try sushi the first time but that was like 20 years ago and I’ve been hooked ever since. And this Spicy Tuna Sundae is one of my favorite things ever. The Spicy Tuna Sundae ALSO took some coaxing to get me to order the first time because….ew….when I think “sundae” it most definitely isn’t spicy and it most certainly does NOT have tuna in it. Am I right?

Spicy Tuna Sundaes are really expensive too and the last time we ordered one the price had doubled while the portion size had shrunk! It’s not the most economical thing on the menu so I decided the time had come to visit my local fish market and make them myself. And guess what, I made FOUR decent sized Spicy Tuna Sundaes for the price of one at my favorite sushi restaurant. AND guess what ELSE!?!?!? I made them in about 5 minutes. Less time that it would take for me to get in my car and pull out to the end of my driveway! (I like to let my car warm up while I bust out some tunes.)

So, my Spicy Tuna Sundaes are made with just a few ingredients….avocado, tuna, tobiko (which can be found at your local asian market or ordered online here), spicy sauce and peanuts. It’s incredibly easy to make and ready in minutes. Perfect for entertaining and great for spring showers alongside these salmon canapés. Your guests will think you’ve totally outdone yourself!

Quick and easy, Spicy Tuna Sundaes are like mini poke bowls that make great appetizers for any occasion.

Ingredients

  • 1 pound fresh sushi-grade ahi tuna steak
  • 1 large avocado diced
  • 1/4 cup orange tobiko
  • 1/4 cup chopped salted peanuts
  • 2 tablespoons mayonnaise
  • 3 tablespoons sriracha sauce

Instructions 

  • Using a sharp knife, cut off the dark purple and discard (this part is called myoglobin and is a blood pigment, it's very strongly flavored.) Dice the tuna into 1/4 inch square pieces. Set aside.
  • In a small bowl, whisk the mayonnaise and sriracha together until combined. Set aside.
  • Divide the avocado among four small bowls. Top the avocado with equal amounts of tuna.
  • Drizzle the spicy sauce over the tuna and top each bowl with equal amounts of tobiko.
  • Sprinkle with peanuts and serve immediately.
