Sweet, custardy cake is studded with sweet cherries and sprinkled with powdered sugar to create the easiest summer dessert ever.
It’s cherry season and I can’t think of anything better than snacking on fresh, juicy Harry & David cherries all day long. Sweet and juicy, they’re the star of so many summer desserts like pie but I love something easy and quick like this Simple Cherry Clafoutis. A wonderful addition to any summer party or barbecue but still casual enough for a sweet family treat during the week.
This Simple Cherry Clafoutis couldn’t be easier to make. I made a version years ago that was blended with almonds but I wanted something more pure and simple so I omitted the almond flavor altogether allowing the cherries to shine on their own. The batter comes together in just about a minute with the help of your blender. Everything into the pitcher and a few pulses to combine. It has the consistency of a crepe batter, thin and light…but bakes into the most wonderful custard-like cake.
Pour the batter into a pan or baking dish then top with cherries. Bake until golden….and voila, the perfect summer dessert!
A clafoutis can be made with just about any fruit you like but I especially love to toss a few sliced cherries into mine. They’re the perfect combination of tart and sweet which pairs extremely well with the creamy cake.
Bake your Simple Cherry Clafoutis in a cast iron skillet for a little extra texture on the bottom or you can bake it in a regular casserole dish for a lighter texture. Dusted lightly with a bit of powdered sugar, this dessert is a dream come true just as it is….top it with a scoop of vanilla ice cream for a truly show stopping bite of summertime sweetness.
