Hiya all! How’s your week so far? Mine’s been so busy…like insanely busy but since I had the whole glorification of busy I’ll just accept it and move on with my super busy week. 🙂 I think all of us that have kids in school probably feel the same way with homecoming popping up all over and school pictures happening each day….and of course, a haircut for the little guy will be needed before his first official school picture. I swear that kid is getting his haircut every other week and if I leave it to dad, he’ll be coming home with a hairstyle fit for the military. So, I’m micromanaging that situation from the comfort of a Minnesota hotel room. We shall see how that went when I return home on Friday. In the meantime, let’s talk about quick and easy side dishes…shall we?
I’m not usually a fan of pre-packaged food and convenience meals but this one is a keeper. Idahoan Signature Russet Potatoes really shocked the pants off of me and my usually not so happy response to instant mashed potatoes. I have been scarred by whatever instant horror was served to me when I was a child so I tried to stay far, far away from them for as long as possible. But when I was asked to try out the Idahoan Signature Russet Potatoes in a recipe, I thought…why not. And I’m so flipping glad that I did because I love Sunday dinner as much as the rest of us and sometimes I want Sunday dinner on Wednesday.

So, I added my own twist…similar to my original mashed potato recipe but then I twisted it with these mashed potatoes to get THESE amazingly easy Cheddar Chive Mashed Potatoes that are ready in 5 minutes!!! Yes, 5 minutes! Ha!!! How’s that for a speedy comfort side dish that the whole family will love!
- 2 packages Idahoan Signature Russets
- 2 1/2 cups half and half
- 4 tablespoons butter
- 1/4 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped fresh chives
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- In a medium saucepan, heat the half and half and butter over medium-high heat until steaming. Add the potatoes to the pot and whisk until fluffy, approximately 4-5 minutes. Stir in the sour cream, cheese, chives, salt and pepper.
- Serve immediately.
