Hey guys! It’s FRIDAY!!! And I really put a dent in my holiday shopping this week, I’m soooo proud of myself. So, there is a possibility that I won’t be a crazy lunatic lady during the month of December. Right now, my biggest struggle is finding my musical groove. Yeah, weird but music usually sets the tone of my mood and my usual playlist isn’t cutting it. And I keep trying to change things up with the Christmas music but I don’t think I’m ready because after one song I have to change the station. Today….it was Mozart. And this Cranberry Pear Crisp couldn’t be simpler to make. Just peel some pears and chop them up…try not to eat all of them because they’re fabulous this time of year. Toss in a bowl with sugar, flour, cinnamon and cranberries. Pour in your favorite casserole dish and top with the crispy oat crumbs. Bake until bubbling…..it’s ok, you can watch. And then let it rest or you’ll singe your tongue something fierce…..leaving no tastebuds left for your Thanksgiving turkey.

Ingredients

  • 5 pounds pears, peeled, cored and chopped
  • 2 cups cranberries
  • 1 cup granulated sugar
  • 4 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon kosher salt
  • 1 cup old fashioned rolled oats
  • 1/2 cup flour
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 5 tablespoons unsalted butter, chilled and cut into cubes

Instructions 

  • Preheat oven to 350 degrees.
  • In a large bowl, toss together pears, cranberries,sugar, cinnamon, ginger and salt. Combine thoroughly and pour the mixture into the bottom of a baking dish and spread evenly.
  • In a medium bowl, whisk together oats, flour, sugar, cinnamon and salt. Using your fingers or a pastry cutter, work the butter into the oat mixture until coarse crumbs form.
  • Sprinkle the oat mixture evenly over the pear mixture.
  • Transfer the baking dish to the oven and bake for 45-50 minutes or until bubbling and golden brown.
  • Serve hot or at room temperature with whipped cream or ice cream, if desired.
