Red White and Blue Popsicles

Patriotic summer holidays are right around the corner and refreshing summer treats like these easy smoothie, fruit popsicles are just what you need.

Simple to make, Red White and Blue Popsicles are made with a healthy smoothie base, greek yogurt and fruit making these one of the most nutritious summer snacks even the kids will love.

They’re so good, you may even want to start your day with one…..and not a bad idea since it’s basically a frozen smoothie on a stick!

How To Make Them

These summer fruit popsicles are as easy as making a smoothie.

Blend the strawberries and honey until smooth.

Pour the base into a popsicle mold and freeze.

Stir the vanilla and yogurt together and top the strawberry mixture with the yogurt mixture. Freeze until almost firm.

Blend the blueberries and remaining honey until smooth.

Top the yogurt mixture with the blueberries.

Insert the popsicle sticks and freeze until firm.

To release the popsicles, run the mold under hot water for 10-15 seconds and slide the popsicles from the mold.

Transfer each popsicle to a freezer bag and freeze until ready to serve.

What Type of Mold To Use

You can use any type of popsicle mold you want to make Red White and Blue Popsicles but I’m partial to the old school shapes like this one.

You can also freeze your popsicles in a deep welled muffin tin (silicone works best) or using paper cups.

A patriotic popsicle that’s easy and healthy!

Ingredients

  • 1 cup strawberries
  • 1 cup blueberries
  • 2 tablespoons honey
  • 1/2 cup vanilla yogurt
  • 1/2 cup lemon yogurt

Instructions 

  • In a blender, puree the strawberries until smooth. Add 1 tablespoon honey (optional) and blend for 20 seconds longer. Divide the strawberry puree evenly between 8 popsicle molds and freeze.
  • Add the blueberries to the blender (clean it first, LOL!) and puree until smooth. Add the remaining honey and blend for 20 seconds. Set aside.
  • In a small bowl, whisk together the vanilla and lemon yogurt until smooth.
  • Remove the popsicle mold from the freezer. Divide the yogurt mixture evenly between the 8 popsicle molds and tap on the counter gently to release any air bubbles.
  • Top the yogurt with the blueberry puree dividing evenly among the popsicle molds and insert popsicle sticks into the center.
  • Return the mold to the freezer and freeze until firm, approximately 4 hours.
  • To release the popsicles, run the mold under hot water for 5-10 seconds until the popsicles can be pulled out of their reservoir. Transfer to a plastic bag and freeze until ready to serve.

Notes

Popsicles can be made up to 2 months in advance but they won’t last that long.  So make extra!
