Have you ever had one of those days when you rush to get out the door in the morning….coffee in hand, hair barely brushed, counting the minutes and calculating just how late you will actually be to work? But you finally get there and realize….you have two different shoes on AND you left your lunch on the kitchen counter at home. Good times, right? I used to have those days a lot. Especially when you have little ones to get out the door along with yourself! And there were many times when, come lunch, I would find myself scrambling for something healthy to eat.

Believe it or not, I used to hit the local Wendy’s to grab a quick, fresh and healthy bite to eat and I still find myself pulling up to order one of their amazingly crisp salads. Year after year, I know I can count on Wendy’s to serve up plenty of healthy options for a quick meal on the go and that’s why I was so excited to get the chance to have salad for breakfast with the whole Wendy’s crew! If you follow me on Instagram you may have seen the whole story.  It was a ton of fun and filled with a ton of information that made me even more of a Wendy’s fan than I already was!

All of their salads are made with the freshest ingredients available which are hand chopped to ensure you’re not getting a less than stellar salad. Their new Strawberry Mango Chicken Salad is made with sweet mangos, freshly-sliced strawberries and juicy grille chicken. Drizzled with a honey-citrus vinaigrette, this bowl of heavenly deliciousness is such a tasty surprise for a fast food restaurant. And so are their other options like the new Fresh Mozzarella Chicken Salad made with fresh chopped lettuce, fresh mozzarella, creamy basil pesto and grille chicken. Crunchy croutons and a zesty balsamic vinaigrette make this taste like summer in a bowl! The Power Mediterranean Salad and Taco Salad are long time favorites of mine but they’re a must-try as well.

Wendy’s also offers some new, fun summer drinks! Their Fruitea Chillers come in strawberry Passionfruit and Mango Peach flavors and are the most refreshing beverage I’ve sipped in a longtime. I’m not a big sweet drink fan so both of these hit the spot and have me craving the day after day.

And since there are days when I can’t actually get out of the house, I recreated the Strawberry Mango Chicken Salad at home! The flavors are a total match made in heaven….well, Wendy’s….but this simple recipe can be made in just a few minutes. Fresh and light, just like the Wendy’s original…you’ll be chowing down on this one all summer long.

Get the Recipe: Strawberry Mango Chicken Salad with Honey Roasted Sunflower Seeds

Ingredients

  • 1 cup sunflower seeds
  • 1/2 cup plus 1 tablespoon olive oil
  • 3/4 cup honey, divided
  • 1/4 cup orange juice
  • 2 cups diced cooked chicken breast
  • 1 cup sliced strawberries
  • 1 cup diced mango
  • 4 cups spring mix greens
  • 1/4 cup crumbled feta cheese

Instructions 

  • Preheat oven to 375 degrees.
  • In a small bowl, toss the sunflower seeds with 1 tablespoon oil and 1/4 cup honey. Spread the seeds on a parchment lined baking sheet and transfer to the oven. Roast for 10 minutes. Stir the seeds and roast for an additional 5 minutes. Cool completely. 
  • In a medium bowl, whisk together the remaining oil, honey and orange juice. Season with salt and pepper, to taste. Set aside.
  • Divide the spring mix among two plates and top with the chicken, strawberries and mango. Sprinkle with the sunflower seeds and cheese.
  • Drizzle the salads with the dressing and serve immediately.

Notes

Sunflower seeds and dressing can be made up to 24 hours in advance.
