This seemed like the longest week ever but that’s to be expected when you return from the beach, I guess. And it’s been so stinking hot all week that all I wanted to do was lie around in the air conditioning or on a raft in the pool.

Lazy summer days….they have definitely arrived. I think that calls for a celebration in the laziest way possible…..two ingredient cocktails. Frosty, sweet Pineapple Prosecco Slushies to be exact.

Prosecco Wine Slushie

Long story short…..a prosecco slushie is a blended cocktail that’s made with frozen fruit and prosecco. Just like the ever famous Wine Slushies I found in Disney, they are super simple and fun for parties! Almost like a Frose recipe but without the rose. 🙂

How to make Wine Slushies

Pineapple Prosecco Slushies, aka Wine Slushies, are incredibly easy to make as show in the video below. Just throw your frozen fruit in a blender with a healthy helping of wine and blend until pureed! Pour in a glass, pop in a straw and sip away.

I try to keep bottles of champagne or prosecco on hand for bubbly emergencies….we have them a lot around here. Like the other day, I ate a freezer burnt Nutri-system Carrot Cake because I was desperate for something sweet before bed.

I woke up the next morning not feeling so great and barely made it through my spin class….then I vegged in bed all day because that’s what you do when it’s a million degrees outside and you’re sick. The following day, I was good as new so I needed to celebrate my new found healthy self…..voila, Pineapple Prosecco Slushie! (The end…wasn’t that a riveting story?)

I love a good slushy….we get them at the local Wawa a few times a week but there’s nothing better than a homemade slushie made for the grown ups. And this Pineapple Prosecco Slushie is a bit healthier because there’s no added sugar….other than the Prosecco but that doesn’t really count because it’s in a bottle and, well, it’s made from grapes. Right?

And since I’m really lazy whenever the temps start going through the roof, I can’t really be bothered to stand around mixing cocktails at a party. So, for this one….everything goes into the blender. Stuff as much as you can in there without it exploding then blend away.

Pineapple Prosecco Slushies are, in my opinion, the best way to beat the heat. I like to serve them at pool parties with the girls because what’s more fun than frozen, frothy cocktails in the summertime.

If you have a large crowd, you can also serve them Sweet Tart Strawberry Slushies because they’re super awesome, too! Ingredients

  • 1 16 ounce bag frozen pineapple chunks
  • 3 cups prosecco

Instructions 

  • Place the pineapple chunks and 2 cups prosecco in the pitcher of a blender.
  • Blend the pineapple and prosecco until smooth.
  • Divide the slushie mixture among four glasses. Top with the remaining prosecco.
  • Garnish with pineapple, if desired. Serve immediately.
