Grilled Jalapeno Poppers with Roasted Red Pepper Sauce

Jalapeno Poppers

I love spicy food and jalapeno poppers are no exception.  My favorite poppers are those filled with cream cheese....I'm not a huge fan of the cheddar.  Not sure why, it's just one of those things that I have a thing with.  You know what I mean? Now we all know the usual recipe for a popper calls for some deep frying...and we also know that I don't shy away from deep-fried things.  BUT when I saw Bobby Flay make his Grilled Stuffed Jalapenos on one of his shows on some random Saturday morning, … [Read more...]

Spicy Pineapple Guacamole

Spicy Pineapple Guacamole

An avocado is like a timebomb...once you cut that bugger open you must use it or lose it.  I probably eat more avocado than necessary because if I want a few slices for a sandwich I feel the need to eat the whole thing or risk watching it turn a horrible shade of brownish, grayish, green right before my eyes.  Sometimes I will just not eat it at all because I don't want it to go to waste.  Then they shrivel up in the veggie bin because I didn't use them for fear of waste. Ironic. Sometimes I … [Read more...]

Nutty Brie and Fillo Bites

Here's a VERY, easy appetizer to whip together if you're short on time. You can make the fillo shells youself by cutting out a circle of dough slightly larger than a mini muffin and baking them in mini muffin tins but I urge you to buy the premade shells in your market's freezer section.  It really will save you tons of time! I made these for Christmas Eve using what I had around the kitchen and they were amazing.  I made my own shells that day but for today's photos I bought the frozen … [Read more...]
