White Chocolate Candy Corn M&M Brownie Cookies

These accidentally fell into my cart....the M&M's.  I don't even know how it happened.  I don't even like candy corn but these White Chocolate Candy Corn M&M's are fantastic!  I would have eaten the whole bag if I didn't do something with them quickly. I didn't want to just do the ordinary sugar cookie so I came up with the brownie cookie idea one early morning (3 AM to be exact) when I was suffering from insomnia.  Suffering from insomnia and thinking about brownie cookies...my … [Read more...]

Guiltless No Bake Blueberry Cheesecake

Sometimes I mentally "write" a post when I'm suffering from insomnia.  This is a pretty regular occurrance....which is, almost always, alcohol induced.  When I lay off the wine I sleep like a rock....if a rock were to sleep.  When I have more than half a glass of wine I write blog posts in my mind while staring at the ceiling.  The problem is...I don't write them down because I'm too lazy to roll over and grab a pen to scribble down notes.  Plus, my husband will think I'm insane.  (Even though I … [Read more...]

Cinnamon Vanilla Hazelnut Butter

We are a peanut butter loving family here at The Soapbox.  It's healthy and delicious and you can put it on just about everything.  I remember eating countless peanut butter and jelly sandwiches growing up and never grew tired of them. As a parent, they're so simple to throw together for a quick lunch for the kids.  You don't even need to think about it...you can pull off this delicious concoction before coffee! (gasp!) Lately, however, you can't pack peanut butter (or many other nut … [Read more...]

Whole Grain Pancakes

I love when the UPS man stops at my house...it's like Christmas.  Even when I know something is coming and I actually ordered it myself, it's always exciting when I hear him stop out front and plop a package outside my door. What I don't like is when the UPS or Fedex truck stops in front of the house and then proceeds to pull away without leaving behind goodies.  This happens a lot, we must be the place to stop and check the nav. Or they just like looking at my dead shrubs which were pruned a … [Read more...]

Wheat Berry Waldorf Salad with Citrus Vinaigrette

Years ago, I had a curried wheat berry salad for lunch which I picked up at a grab and go kiosk in an airport.  I don't remember the airport or the kiosk, which is odd for me....I associate every place I've been with a food I've eaten there.  I think it may have been Chicago but I, honestly, can't remember.  It doesn't really matter though....the memory of that salad has stayed with me and I vowed to recreate it....minus the curry.  There's something about eating curry and then sitting on a … [Read more...]

Strawberry and Vanilla Bean Cheesecake Pudding Pops

These are not Mr. Cosby's pudding pops. Remember those? I used to sell them on the playground at recess in elementary school. I LOVED them! They were only a quarter and if you put your tongue on the side it would freeze to it. That's probably why they were discontinued, ya think? A playground full of 10 year olds with Jell-o Pudding Pops dangling from their tongues, that has got to be the reason. I had a craving for them recently and I thought about making my homemade chocolate pudding to … [Read more...]

Photo An Hour

I "borrowed" this idea from one of my favorite blogs....who "swiped" it from one of her favorite blogs.  It looked fun but was a little challenging and their lives look much more interesting than mine.  I should start drinking bourbon. But whatever. Enjoy! 7:00 AM 8:00 AM 9:00 AM 10:00 AM 11:00 AM 12:00 PM 1:00 PM 2:00 PM 3:00 PM 4:00 PM 5:00 PM 6:00 PM 7:00 PM 8:00 PM 9:00 PM … [Read more...]

“Cream of” Asparagus Soup

Sometimes I think getting older stinks.  Now, don't get me wrong....I love my life, I'm happier than ever and, since my mid-30's, I've never felt more comfortable with who I am.  But then, you know....everything in life has to balance out. Lately I've noticed some signs of aging....puffy eyes, wrinkles, a little less than firm skin.  If you've reached middle age you know what I'm talking about.  And there's that balance....happiness and confidence combined with a mad dash for any beauty … [Read more...]

Ham Asparagus and Goat Cheese Frittata

I hope everyone had a wonderful holiday whether it was Passover, Easter or just a sunny Saturday.  We celebrate Easter and I enjoyed spending the day with my very, large and loud family.  We are all very opinionated people and it's important that everyone in the room hear our opinions.  There is a lot of talking over each other but there is also not a lack of communication.  No awkward silence to speak of...whatsoever.  Ever. During one of the 30 or so conversations I had yesterday, someone … [Read more...]

Lavender-Vanilla Ice Cream

Happy Spring, my friends!  I'm relieved to see the winter gone and even though I woke up to a light blanket of snow this morning I know my daffodils will stop being shy...blooming very soon.  I'm waiting.  They already have buds so what's the hold up? In the meantime, I made a very spring-y ice cream for you....thanks to my mother and the movie It's Complicated.  If you haven't seen the movie, Meryl Streep's character makes lavender ice cream which she shares with the ex-husband/current … [Read more...]
