Green Eyed Monster Deviled Eggs

Green Eyed Monster Deviled Eggs | The Suburban Soapbox

Spooky fun for your next Halloween bash.  Deviled eggs stuffed with an avocado filling are a healthy alternative to the usual mayo-based eggs.  Dressed up to look like monster eyes, these will disappear so fast...it's scary! I haven't been to a Halloween party in years.  Like a decade or more.  I'm not a huge fan of Halloween...there's something about decorating the front lawn with gravestones and rotting corpses that is a little unsettling.  I'm a "happy" Halloweener.  I like the cute … [Read more...]

Strawberry Coconut Butter

Strawberry Coconut Butter | The Suburban Soapbox

Creamy coconut butter blended together with tart strawberries.....the ultimate clean-eating treat.  Perfect on your morning toast or spread on a cookie for an after-school snack, this recipe is incredibly easy to make. My obsession with coconut butter began last fall.  It was an accident.....I wanted to chop up some coconut in the food processor.  Just into small pieces.  Sometimes I forget things, even loud things....like a food processor that's whirling away in the background as loud as … [Read more...]

Easy Homemade Hummus

Easy Homemade Hummus | The Suburban Soapbox

The smoothest hummus you will every try....period.  So easy to make, you will never buy the stuff at the store again.  Katie got a new job last year at a place I'd never heard of.  She walked in the living room one night and said she applied for a job at Zoe's Kitchen.  I immediately Googled it......and it seemed like the answer to my prayers.   Literally...healthy, fresh "fast" food.  I counted the days until it opened.  It was well worth the wait for the hummus alone. Their … [Read more...]

Vanilla Toasted Coconut Cashew Butter

Vanilla Toasted Coconut Cashew Butter | The Suburban Soapbox

Toasty coconut and creamy cashews are blended together into a heavenly, healthy butter.  You're welcome. I'm not a very organized person....I go through life a little more loose than some others I know....more "fly by the seat of my pants."  I always have some kind of sketched out plan for the day but knowing how life is I'm ready for anything.  So I try to not be rigid with what I want to achieve.  Like a frozen pipe can throw a wrench into any otherwise perfectly, constructed … [Read more...]

Homemade Coconut Butter

Homemade Coconut Butter

I have been seeing coconut butter everywhere lately and more and more recipes are using it as an ingredient. A VERY EXPENSIVE ingredient. I received a sample from Artisana and when I went to buy a jar I nearly fell over when I saw the price. At just under $10 a jar, that's a little more than I want to spend on something I am now hooked on. Seriously, this stuff is incredible. Creamy and coconutty.....I have huge plans for this butter. Bonus points for its health benefits. Coconut is now … [Read more...]

Spiced Coconut Chia Seed Pudding

Spiced Coconut Chia Seed Pudding

As you can see, I'm still playing with chia seeds.  I've been trying them out in just about everything....some things are better without them.  But this pudding is not one of those things. I was cleaning out the refrigerator the other day, a chore I despise, and found some leftover coconut milk.  It didn't take me long to decide I was going to make a pudding.  A healthy pudding, something to take the edge off when I'm craving something sweet.  I wanted it to be creamy and cinnamony....like a … [Read more...]
