Skillet Tortellini with Sausage and Pesto

Skillet Tortellini with Sausage and Pesto | The Suburban Soapbox

Cheese Tortellini tossed with Italian sausage, pesto and pine nuts make a flavorful and quick dinner.  One skillet cooking makes clean up a breeze. Carbs are the best!  Don't you agree?  They're even better when stuffed with cheese.  Because everything's better with cheese.  And bacon but I didn't use bacon today.  I stepped it up and threw in some sausage.  Sausage is my bacon.  I love it more than any other pork product out there.  Crumbled....linked....patties....it's all so yum.  And … [Read more...]

12 Recipes for Sunday Family Dinner

Lasagna Bolognese - The Suburban Soapbox

Sunday seems to be the day that many families get together and enjoy a hearty meal.  I hear about "Sunday Family Dinner" a lot, like it's an urban myth.  The Sopranos had them all the time....every Sunday to be exact.  Katie, my daughter, goes to Sunday Family Dinner at her friend's house pretty frequently.  And she's not even their family.  I have thought about crashing "family dinner" because she always comes home with a laundry list of items they had that night.  AND the fact that she's not … [Read more...]

Meyer Lemon Shrimp Scampi

Meyer Lemon Shrimp Scampi | The Suburban Soapbox

Meyer lemons replace regular lemons to update this old classic.  A quick sauté on your stove top makes this the perfect, elegant, weeknight meal!  Meyer lemons are a cross between a regular lemon and a mandarin orange....like the mutt of the citrus world. They are a lot less sour than a regular lemon making them great to tone down the pucker in a lot of lemony dishes.  They're perfect for baked goods because you can use a little less sugar since you don't need to balance out the sour … [Read more...]

Pasta with Butternut Squash, Sausage and Sage Pesto

Butternut, Sausage and Sage Pesto Pasta

It is comfort food season.  This is the time of year when it's perfectly acceptable to eat ridiculous amounts of pasta and cheese...or pasta with cheese.  And chocolate and cake and butter...you get it. Muffin tops can now be camouflaged with this season's hottest trend.  The chunky sweater.  Yes, that's right....big, thickly knitted sweaters are making a comeback and we, my friends, can rejoice by eating large amounts of carbohydrates.  If you don't believe me, check out this article on … [Read more...]

My “Secret” Bolognese Recipe

Pasta Bolognese

I'm not a fan of red sauce (gasp!), which is kind of funny that this is one of my favorite things to make.  I am perfectly content with pasta drizzled with an exceptional olive oil, chopped parsley and grated parmesan. But it's the whole process of browning the meat and sauteing the onions, carrots and garlic and then letting the whole thing simmer on the stove for hours that's kind of therapeutic for me.  PLUS, it makes sooooo much that I can freeze enough for two more meals....which means … [Read more...]
