One of the most rewarding things about being a food blogger is the amazing people I get to meet. The blogging community is full of beautiful, fun and special people that support each other every single day. I worked in the corporate world for years where I would see wonderful (and let’s face it…not so wonderful) people all day long…Monday-Friday. Because of the close knit quarters we had no choice but to get to know each other quite well. With blogging….I can go months without seeing another fellow blogger but the relationships that are built despite being hundreds of miles apart are so strong and so extraordinary. It’s like nothing I’ve ever experienced in my life.
This week, I had the incredible opportunity to work with Carrian of Oh Sweet Basil to create a guest post over there. She challenged me to come up with an Easter dessert full of spring colors….and so I did. These Cadbury Mini Egg Cupcakes just scream spring to me and I’m sure they’ll put a smile on everyone’s faces this year. If you haven’t read through some of Carrian’s posts you may want to pay her a visit. I know a lot of you are always looking for quick, tasty family meals and she has a plethora of them. And, although I don’t know her in person, I’ve been a long time fan of Carrian. She is the warmest, kindest person with the most angelic looking children. I’m sure you’ll fall in love with her just as I did.
These cupcakes are really easy to make and they’re speckled with crushed Cadbury Mini Eggs. If you haven’t had mini eggs yet, you should change that immediately…they’re creamy milk chocolate coated in a light, sugary candy shell. Totally addicting and totally incredible. The cupcakes are simple to decorate…anyone can do it, as long as you can keep from eating all the Peeps before you are finished. They will make an excellent addition to your Easter dessert table or are the perfect snack for an egg hunt party! Display with a few buckets of Bunny Bait and your guests will be bouncing off the walls just like a real live Easter bunny.
