I remember….a long, long time ago….when I was a wee one….I used to tote a giant accordion file to school with me filled with box tops. I didn’t know what they were for or why my mom went through all the trouble to cut the little squares off the boxes but I obliged and hauled the whole lot to school. We had a big bin in the cafeteria where you would deposit your goods (the box tops) and then the school did whatever they did with them. Now, my school program from 1802 (I kid, I’m only 22….again) and the current program are not the same program. And since I wasn’t really well versed in what was going on in my own backpack I can’t even tell you anything about it. Ingredients

  • 1 package Betty Crocker Loaded Casserole Potatoes
  • 6 boneless skinless chicken thighs
  • 3/4 cup panko bread crumbs
  • 1 tablespoon melted butter
  • 1/2 teaspoon onion powder
  • 1 tablespoon chopped fresh chives

Instructions 

  • Preheat oven to 425 degrees.
  • In a small bowl, whisk together 1 1/2 cups boiling water, 2 tablespoons butter, 3/4 cup milk and sauce mix until smooth. Stir in the potatoes and pour the mixture into a medium baking dish.
  • In a small dish, stir together the panko, butter and onion powder. Set aside.
  • Arrange the chicken thighs on top of the potato mixture. Sprinkle the panko mixure over the chicken. Transfer the baking dish to the oven and bake for 25 minutes or until the chicken is cooked through.
  • Serve immediately.
