How was everyone’s weekend? The weather was beautiful so I got all fall and bought a bunch of mums to replace the dried and depressing flowers that were still in my flower pots. None of the buds are quite open yet since it’s still early so everything just looks like a green bush filling the pots. I have some travel coming up this week and so does the Pope….if you haven’t heard. The World Meeting of Families is being hosted in Philadelphia this week and, of course, this is when I am scheduled to travel. The city is closing down several major highways and a few towns are declaring a state of emergency. Something you don’t really hear of unless there’s a huge snow storm…so basically, they want everyone to park their butts on the sofa and wait out the Pope’s visit. Not me….I’m getting on a plane this week for a two day trip and returning when all the mayhem is about to get really insane. And the hilarious thing about this, to me anyway, is that I don’t travel that much. So, the one trip I DO take is exactly when travel in these parts will be like a three ring circus….or the apocalypse.

Either way, I’m prepared….I’ll make sure I have enough water to last me a few days for my drive home from the airport and I’ll be packing these No Bake Pumpkin Pie Energy Bites so I don’t wither away in the middle of the expressway. They’re really easy to make and I know this isn’t the kind of thing I normally post but life can’t always be about warm caramel sauce and bread pudding….or can it. What I do know is that a lot of you like to live like me…everything in moderation and everything needs to be insanely tasty. So, healthy or not, all the recipes here will make your tastebuds squeal with joy with every single bite. No Bake Pumpkin Pie Energy Bites are like little oatmeal cookie balls except they taste like spiced pumpkin pie. Like pumpkin pie and an oatmeal cookie met…fell in love…and had a baby. Or maybe they had a one night stand…whatever…they had a baby and that baby is a No Bake Pumpkin Pie Energy Bite. Here’s a warning for you…don’t eat one before bed….just like a baby it will keep you up all night. Just kidding. 🙂

Get the Recipe: No-Bake Pumpkin Pie Energy Bites

Little bites of Pumpkin Spice heaven....No Bake Pumpkin Pie Energy Bits are the BEST healthy snack ever.

Ingredients

  • 1/2 cup canned pumpkin puree, not pumpkin pie filling
  • 1/2 cup unsalted creamy peanut butter
  • 4 tablespoons maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1 1/4 cups rolled oats, I used Bob's Red Mill
  • 1/4 cup ground flax meal
  • 1/2 cup unsalted pumpkin seeds
  • 1/2 cup raisins
  • 1/4 cup whole flax seeds

Instructions 

  • Combine all ingredients in a bowl until well blended and refrigerate for 15-20 minutes. Roll the mixture into 1 inch balls and place on a baking sheet lined with parchment. Return to the refrigerator for 15 minutes. Transfer the balls to an airtight container and store in the refrigerator for up to 1 week.
  • Pumpkin Pie Energy Bites can be frozen in an airtight container for up to 2 months.
