Italian Sausage Soup with White Beans and Spinach // Video
The easiest and most flavorful weeknight dinner ever, this Italian Sausage Soup with White Beans and Spinach is on the table in less than 30 minutes using a few pantry staples. Healthy and hearty, this one is on regular rotation at my house.
Happy Friday, everyone! I hope you all had a great week and are ready for the weekend. To be honest, this week just flew on by…like at warp speed. I could barely keep up, which is odd because I was home working every single day. I made another video for you all that will be up next week…I bet you won’t be able to sleep for days now just waiting for it’s premier. 🙂 In the meantime, let’s make some soup.
Back in the day…I used to relax with a cooking magazine and a glass of wine almost every single night. I like to eat and I despise eating the same thing all the time. So, when people talk about their dinner rotations I often wonder…does your rotation include five meal ideas or 20? Because if it’s five….don’t you get bored eating the same thing all the time? Does your family revolt at any point and demand a bowl of Lucky Charms? Do they chase after you with torches and pitchforks at the lack of creativity? Well, my family probably would do all three so I like to mix it up a bit….that’s where things like Cooking Light and the now defunct Gourmet magazine came in handy. I would leaf through and dog-ear pages of recipes like this skillet chicken that’s pretty amazing or these slow cooker short ribs. One of those recipes was for an Italian Sausage Soup from Cooking Light. It was definitely a dinner that was on a bi-weekly rotation because it was so quick and easy to make.
Through the years, I changed it up slightly but the base of it remained the same…mild Italian sausage, chicken stock, canned diced tomatoes…then you could basically add whatever you wanted to mix it up a bit. My favorite rendition is this one with white beans and spinach. The beans add extra fiber and a heartiness that helps fill you up. And we always have the ingredients on hand for quick soup emergencies….we have a lot of those in the winter months. The smell of this Italian Sausage Soup with White Beans and Spinach is absolutely heavenly….your family will think you’ve been slaving all day in the kitchen. Even if you were at the office all day playing Candy Crush on your phone.
Get the Recipe: Italian Sausage Soup with White Beans and Spinach
Ingredients
- 1 pound mild Italian sausage, casing removed
- 1 large vidalia onion, diced
- 2 garlic cloves, minced
- 1 tablespoon Italian Seasoning Blend, I use Spice Islands
- 5 cups chicken stock
- 1 14.5 ounce can diced tomatoes
- 1 15.5 ounce can cannellini beans, rinsed and drained
- 1/2 cup small cut pasta, I use DeLallo Ditallini
- 2 cups baby spinach
- Grated parmesan cheese, for serving
Instructions
- Place a large pot or dutch oven over med-high heat and add the sausage, breaking it up in to small pieces with a fork as it browns. Continue cooking until the sausage is no longer pink. Transfer the sausage to a bowl with a slotted spoon and discard all but 1 tablespoon of fat.
- Return the pot to the stove and add the onions. Cook the onions until translucent, approximately 4-5 minutes. Add the garlic, cooking for one minute until fragrant.
- Stir in the Italian seasoning and 1/4 cup of chicken stock to deglaze the pan being sure to scrape up any brown bits with a wooden spoon.
- Stir in the tomatoes, beans, sausage and remaining stock. Add the pasta and bring the soup to a boil. Cook for 6-7 minute or until the pasta is al dente.
- Stir in the spinach. Serve immediately topped with parmesan cheese.

Delicious soup!!! Took more than 30 min. Though….but it was worth it! I added diced cellery and carrots, with the onions….gotta get my veggies!
Love the addition of veggies! Thank you for your comment, I’m happy you enjoyed it!
Makes great left over.
Thank you!
Thanks for this delicious soup recipe! So simple, quick and healthy. We loved it!
Thank you so much! I’m so happy you enjoyed it!
I made this soup yesterday! It was so delicious, that I could not stop from eating it! I had two cups. When it was ready for the spinach , I divided the soup in half. Two people in my family do not like spinach! Everyone raved about the soup! It is a “keeper.”
Thank you so much! I’m so happy you enjoyed it!
I first made this delish soup last yeR, and immediately added the recipe to my “Favorites”. Now that Fall is here again, I am wondering if I can make it with whole sausages, sliced into discs.
BTW, I use half and half sweet sausages…..love the heat.
THANK YOU for this amazing soup.
I’m so happy you enjoyed it! It’s one of our favorites.
This is a regular for my family. My kids ask for “that soup with the round noodles and white beans”. It’s so fresh tasting but filling. I double the beans, spinach and tomatoes and add a bit more liquid. This makes a pot big enough to fill all 7 of us.
Thank you for your comment! I’m so happy you love it and we also started adding more stock because the noodles suck it up. 🙂
Great basic recipe, with lots of room for tweakage! I recently got hooked on the Instant Pot, so fresh cooked cannellini beans and homemade broth are almost as easy to get together as canned, and this recipe really makes those ingredients shine. Added some red pepper flakes and extra garlic and black pepper for a bit more kick; diced fresh Roma tomatoes and some tomato paste instead of the canned; a bit of lemon juice for some tartness, and some chopped parsley. Definitely going into rotation! Want to try other greens like escarole, mustard, kale.
Thanks for all your tips!
Hello!
You think I can freeze leftovers?
YES! It freezes beautifully!
Soup was delicious and so quick to make. Went perfect with my fresh homemade French bread.
Love that you served with homemade bread. sounds heavenly!
Hi there,
Can I use chicken broth instead of stock?
Thanks,
Renee
You sure can! The stock has a richer flavor but the broth will work if that’s what you have on hand.
Made this today and it was delicious and super easy. I added some red peppers in with the onions. I will definitely make this again!
Love the tip to add red peppers, totally going to do that next time I make it! I’m so glad you loved it, this is one of our favorite weeknight dinners! Thank you for commenting!
Delicious!
Thank you!
Are the sizes correct on the tomatoes and the beans? I wanted to check before making.
Hi! Yes, one can of each….14.5 ounce and 15.5 ounce can.
The nutrient facts says one serving is 1g? I’m trying to figure out my macros and this doesn’t make sense to me.
I don’t know how to calculate macros so I’m not going to be able to help you. I’m so sorry.
But about a cup of soup is around a serving.
Soup was amazing – I substituted the pasta for tortellini instead and I did not cook it in the soup – I cook it on the side and then add it as we need it – once the soup is completely cooled down I will add it and then put it away – Also, I only added 1/4 tsp of the Italian seasoning since the sausage has so much flavor to begin with – definitely will be making this again
Such a great suggestion to add the tortellini!
Ah thank you so much for this recipe! I made it for dinner and it was absolutely delicious!
Thank you! It’s our favorite!
Made this last night for dinner, it was fantastic. Hubby loved it!!! I did add salt and pepper as well. Having it for lunch today 🙂 Thanks for this great and quick recipe!!
It’s so good for lunch the next day! Thanks so much for commenting!
