You would think with being a food blogger we would have elaborate dinners on the table every evening. I spend a good percentage of my day on my feet in the kitchen chopping, stirring, testing, cooking but barely ever eating. Like sitting down to a meal at the table and eating. I taste a lot of things to be sure that you’re not going to gag when you duplicate the meal at home but really….I don’t eat a full meal most days because I’m filling up on bits of this and pieces of that. It’s crazy…I’m just as insane come dinner time as I was when I worked outside the home. That’s when I decided to stop the insanity and create a few fast, fresh and healthy meals I can whip up with ingredients I have in my pantry.

I always have tons of tuna but one can only eat so many tuna sandwiches and wraps before throwing in the tuna towel. I wanted to find an alternative but still be able to have whatever it was stocked in my pantry for a last minute meal. That’s when I was so excited to find these new Chicken of the Sea Flavored Salmon Pouches at my local Walmart. They come in a variety of flavors to suit anyone’s picky palate but I grabbed a handful of Sweet and Spicy Salmon because I knew my family would love them. They’re precooked and seasoned to make mealtime a breeze!

This Sweet and Spicy Thai Salmon Flatbread is my latest creation. Inspired by this Thai salad I made months ago, I decided to create a fun dinner that even my kids would eat. The peanut sauce is completely addicting and is so simple to make. I also used a prepackaged flatbread to make life even easier! If you think it’s a bit spicy, you can definitely cut back on the chile sauce a bit. It’s your flatbread so adapt it to what you’re going to like. And if you’re worried the salmon is too spicy…fret not. 🙂  It just has a bit of heat so even those with sensitive taste buds will still enjoy it.

Quick and easy Thai Salmon Flatbread is a little sweet a little spicy and topped with a peanut sauce you'll want on everything.

Ingredients

  • 1/2 cup creamy natural peanut butter
  • 1/4 cup low-sodium chicken broth
  • 3 tablespoons soy sauce
  • 2 1/2 tablespoons honey
  • juice and zest of one lime
  • 1 cloves of garlic, chopped
  • 1 tablespoon red curry paste or curry powder
  • 1 shallot, chopped
  • 2 tablespoons chili paste
  • 2 tablespoons rice vinegar
  • 1 pre-made flatbread
  • 1 pouch Chicken of the Sea Sweet and Spicy Flavored Salmon
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup chopped peanuts
  • 1/4 cup chopped matchstick carrots
  • 1/4 cup chopped cilantro
  • 2 tablespoons thinly sliced red onion
  • 1/4 cup rice noodles

Instructions 

  • In the bowl of a food processor, add the peanut butter through rice vinegar. Process the ingredients until smooth. Set aside.
  • Line a baking sheet with parchment or foil. Place the flatbread on the baking sheet and spread the salmon in an even layer over the flatbread. Sprinkle with cheese and bake for 10-12 minutes.
  • Top the flatbread
