I’m baaaack! I hope you all had a great holiday weekend if you’re here in the US. I took some time off and headed to the beach for a bit of sun and relaxation. It was a fantastic way to kick off the summer season and spend some time with my family. My little guy just loves the ocean so, despite the fact that the water was just a few degrees shy of snow, he was in it the whole day! Digging up sand crabs and looking for minnows….I miss the days when I could be entertained by the simple little things in life.
Nowadays, I need something big and bold to get my attention…..like Spicy Grilled Barbecue Ribs. And you may be thinking I’m a day late and a dollar short with this post but summer is just beginning, my friends. Memorial Day weekend may be over but you still have lots of grilling time to enjoy these tender, juicy morsels. They’re super easy to make and perfect for summer entertaining. I mean, really….who doesn’t like barbecue ribs??? (Well, I know a few people but I may have unfriended them on Facebook because of their weirdness.) 🙂
Spicy Grilled Barbecue Ribs start with a generous coating of your favorite pork rub. I’m kinda partial to this Cowboy Rub by McCormick. It has a subtle smokey flavor and a bit of spicy heat. I love to use it on my barbecue chicken too and the occasional steak doesn’t mind it either. The ribs can be rubbed up to a day in advance and stored, uncovered, in the fridge. This allows the meat to dry out a bit…but don’t worry…dry meat ahead of time does not mean dry meat at dinner time. It’s all good. 🙂 Allow your ribs to come to room temperature before tossing on the grill at high heat…..then low and slow for a good 40 minutes to an hour. This is the step that provides that “fall off the bone” tenderness. During the last 10 minutes of cook time, slather that rack with a hearty coating of Spicy Barbecue Sauce. Do it a few times to create a sticky, sweet blanket of amazingness. Then serve them alongside some homemade macaroni salad or this crazy amazing potato salad. Now….how easy was that? If you’re not a fan of spicy sauce, try this blueberry version instead!
Spicy Grilled Barbecue Ribs
- Place the ribs on a baking sheet lined with foil. Rub the rack with a generous amount of the pork rub. Allow the ribs to marinade for 2-24 hours in the refrigerator uncovered.
- Remove the ribs from the refrigerator and allow to come to room temperature, approximately 30 minutes.
- Turn the grill on high. Place the ribs on the grill and cook for 3 minutes on each side. Turn the side burners to low and the middle burner off. Place the rack in the middle of the grill and close the lid. Cook the ribs for 20 minutes. Flip the ribs over and cook for another 10-15 minutes.
- Coat the ribs with the barbecue sauce and cook for an additional 3-4 minutes. Flip the ribs and coat the reverse side with barbecue sauce. Cook for another 3-4 minutes.
- Transfer the ribs to a serving platter and allow to rest for 5-10 minutes covered with foil.
- Cut the ribs apart and serve with extra barbecue sauce, if desired.
