Hey guys!!! Happy Tuesday! I know I’ve been a little slow with the posting lately but I decided to cut back because….well….the weather has been beautiful and I wanted to bask in the sun a little bit…then it’s super hard to get back to the grind. But I’m here and I have a TON of new recipes to share this week. That’s if I can drag myself away from our brand spanking new inflatable waterslide that I shared on SnapChat (Follow me @SoapboxSnaps). The thing is pretty hideous to look at but I secretly wish they made an adult version. I mean, how FUN would that be??? Am I right? My little guy just loves it and, even though I know it’s killing the grass underneath…and we’re totally wasting water….and a bunch of other stuff I’m not going to get into right now….it’s all about creating fun memories for our kids.
I have OTHER fun memories from growing up which did not include my very own waterslide in my backyard. We did, however, frequent a water park in Rehoboth Beach when I was young…and here’s the hilarious part, the whole slide was made of concrete! Yes, it was rock hard and a little rough. So, you took a mat (which was like a really thick yoga mat) and hiked all the way up to the top, then slide down on the mat and HOPED you didn’t fall off because the mat was slick…your wet bathing suit, not so much. And that concrete would leave like massive rug burns on your elbows and knees. It was quite painful but I still grabbed my giant yoga mat and ran to the top to do it again. So, long story short, the water park is not there anymore but I have such fun memories. And now you do, too…aren’t you glad I took you down memory lane with me? Ok….so what does this all have to do with Teriyaki Sauce? Absolutely nothing….but I have memories of eating tons of Teriyaki Chicken and so….Easy Teriyaki Sauce Recipe.
To create new memories, ok? I’m here to help you with that. I loved Teriyaki Chicken when I was little. It was always served with white rice and steamed broccoli. Like every single time. And the routine just made me happy because I always knew what to expect. But the past few years…whenever I bought bottled teriyaki sauce it was always different. Sometimes it had sesame seeds…sometimes it didn’t. Sometimes it was thick…sometimes thin. Sometimes salty…other times…not so much. So, I wanted something tried and true that I could count on for consistency sake. Because there’s nothing worse than testing out a new recipe and it fails because your favorite sauce has changed it’s ways. Know what I mean?
So, last year when I made these Chicken Teriyaki Skewers…I made this Easy Teriyaki Sauce Recipe. And then I put it in a jar and kept it on hand for always and forever. It’s become a staple in my house and for good reason, it’s consistent. And it’s less salty than store bought sauce….and it has no preservatives. It comes together in a saucepan and just a few minutes of your time. All the ingredients go into the pot and you whisk for a bit until it thickens. Remove from the heat and use in your favorite recipes calling for Teriyaki Sauce. I’ll have more of them for you this week but in the meantime….make the skewers. They’re the best. And serve them with some spicy tuna or this zucchini noodle salad.
Easy Teriyaki Sauce Recipe
- 1/2 cup soy sauce
- 1/4 cup water
- 2 tablespoons sweet rice wine
- 1/2 cup brown sugar
- 1 1/2 teaspoons minced garlic
- 2 teaspoons minced ginger
- 1 tablespoons cornstarch
- In a small saucepan over medium heat, add the soy sauce, water, rice wine, brown sugar, garlic and ginger.
- Bring the mixture to a boil and then turn the heat to low.
- Simmer for 5 minutes.
- In a small bowl, whisk together the cornstarch with 1 tablespoon of water.
- Slowly whisk the cornstarch into the soy sauce mixture and turn off the heat. Set aside.
