I’m baaaaaaaack! It’s been awhile. And the funniest thing is I didn’t really go anywhere. I just had a really tough time getting back into the swing of things after the July 4th holiday. I developed a serious case of summer fever and a pile of projects I had to complete before I could get back to making the fun stuff for all of you. The easy stuff. The recipes that won’t make you break a sweat because if your weather has been anything like our’s here in the mid-Atlantic…it’s been hotter than the surface of the sun. Really…just looking outside I would start to sweat. So, I packed up my car and headed to the coast with my little guy for a few days of surf splashing, lobster eating and kite flying….you can catch my lazy days all over on Instagram if you’d like.

In continuing with my lazy days of summer….I bring to you these ridiculously easy 2 Ingredient Cream Biscuits. They’re amazing….really, they are…in so many ways. In their simplicity of just two ingredients….cream and self-rising flour. In their simplicity of flavor which is the perfect vehicle for transporting jams and butters straight into your mouth. In their surprisingly fluffy, light texture and addictingly crisp exterior. They are the perfect biscuit in my opinion.

You can even lighten them up a tad by replacing the cream with half and half to cut the calories.

I love to slather a heaping spoonful of butter and strawberry jam on my 2 Ingredient Cream Biscuits and call it dinner. That’s totally fine because I’m the mom and I make the rules so really…who’s going to stop me. They’re just as flavorful as these cream scones but with much less ingredients and no glaze….but you can totally add a glaze if you want because that would just make them like the best biscuits in the whole entire world. Am I right?

Serve your 2 Ingredient Cream Biscuits at your next cookout and replace the bun in your cheese stuffed sliders or slice on in half and top with a bit of pulled pork. Both genius ideas if I do say so myself.

Two ingredients.....that's all you need to bake perfectly fluffy cream biscuits.

Ingredients

  • 2 cups self-rising flour
  • 3/4 cup heavy cream, plus 1 tablespoon
  • pinch of kosher salt

Instructions 

  • Preheat oven to 450 degrees.
  • In a large bowl, stir the flour, cream and salt until the batter is smooth.
  • Lightly knead with your hands and then form into a circle about 1 inch thick.
  • Cut out the biscuits using a 2 inch biscuit cutter.
  • Arrange the biscuits approximately 2 inches apart on a baking sheet lined with parchment.
  • Bake the biscuits for 10-12 minutes until golden brown.
  • Serve warm or at room temperature.
