Hey y’all! I hope you had a great weekend! I spent my Saturday working so I can enjoy one last week at the beach before all the school hubbub begins. BUT today, we had family day and spent the afternoon at the movie theatre watching Pete’s Dragon. Have you seen it? So, three weeks until my baby boy gets on the big school bus to start kindergarten. Every single time I think about it I feel a little sick…and sad….and want time to stop completely. These Oatmeal Raisin Energy Bites are so easy to make and taste almost like an Oatmeal Raisin Cookie. I won’t lie…they don’t taste EXACTLY like a cookie but the flavors are amazing and you’ll feel full, satisfied and energized. I love to pop one right before my trip to the gym and they’re fantastic as after school snacks for the kids. Get the Recipe: Oatmeal Raisin Energy Bites

Oatmeal Raisin Energy Bites are your new favorite way to get you sweet treat fix without blowing your diet.

Ingredients

  • 2 cup old fashioned rolled oats
  • 3/4 cup raisins
  • 1/2 cup almond butter
  • 3 tablespoons honey
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons water, if needed

Instructions 

  • In a large bowl, stir the oats, raisins, almond butter, honey, chia seeds, cinnamon and nutmeg until thoroughly combined. (If the mixture is still dry, add water one tablespoon at a time until moistened enough to stick together.)
  • Roll heaping tablespoons of the mixture into balls and place on a baking sheet lined with parchment. Refrigerate the energy balls for 1 hour.
  • Transfer to an airtight container for up to five days.
