We’re going to pull it back a little bit from the cheesy goodness that I posted yesterday and you’re not going to miss it one bit. I promise. Because….being that I’m not much of a health food junkie or a energy gel chugger…..I am IN LOVE with this No Bake Fudge Brownie Energy Bites. Like TOTALLY SMITTEN! And I’m picky when it comes to healthy substitutes for things like fudge brownies but here….right here….is a chocoholics dream come true.

If you follow me on Instagram you may have seen that I recently was bitten by the spinning bug. My daughter started going to barre class, which I had wanted to try, and then switched to spinning. She kept telling me I should go but spinning just seemed like something that wasn’t really my thing so I, reluctantly, went to a barre class. And then another….and another…and then they didn’t have enough classes during the week in my schedule so I decided it was time to squeeze in a spinning class. And then another. And now…..I LOVE IT! And I’m seeing some changes in the way my clothes fit…..and I didn’t even change my diet that much. I still eat ALL the ICE CREAM! 🙂

But one night….I was out of ice cream and the only chocolate I had lying around was in a protein powder. I wanted a brownie but I really didn’t want to undo the workout from that day so I scrounged up a few things for a little experiment. I grabbed some dates because they’re a naturally sweet treat that’s easily morphed into a dessert if you’re desperate. I threw them in the food processor with some chocolate protein powder, almond butter, a bit of water (just to smooth things out), vanilla extract and COFFEE extract (for some added punch!). I ground it all up into a paste then rolled it into balls that I THEN rolled in crushed walnuts. And guess what…..they taste EXACTLY like a VERY fudgie chocolate brownie!

I’ve been popping one for dessert every single night and it totally satisfies my sweet tooth. They’re great to have on hand as a pre-workout snack and I do feel a bit of an energy boost shortly after I eat one. They’d also be perfect for that 3:00 slump that we all seem to have during the week. I was in love with these Pumpkin Energy Bites and my reader favorite Oatmeal Raisin Bites but these No Bake Fudge Brownie Energy Bites are crushing the competition something fierce. Get the Recipe: No Bake Fudge Brownie Energy Bites

Ingredients

  • 12 whole Medjool dates, pitted and chopped
  • 2/3 cup almond butter
  • 1/2 cup chocolate protein powder
  • 1 1/2 tablespoons water
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coffee extract
  • 1 cup finely chopped walnuts

Instructions 

  • Place the dates, almond butter, protein powder, water, vanilla and coffee extract into the bowl of a food processor.  Process until a smooth paste forms.
  • Transfer the mixture to a bowl and divide into 20 equal pieces. Roll each piece into a ball and roll in the walnuts.
  • Place the balls on a baking sheet lined with parchment and transfer to the refrigerator for 30 minutes or until firm.

Notes

Energy bites can be stored in an airtight container in the freezer for up to 2 months (they won't last that long, they're so good!). No need to thaw before serving.
