It’s the First Day of School EVE! And we had a jam packed day. I somehow managed to schedule a television segment for 7:45 AM and the bus comes at 8:12….so chaos is inevitable. I planned all day long and worked to prep as much as I could all while getting the grocery shopping done, doing laundry, putting elastic shoelaces in Landon’s new sneakers and cleaning up puppy messes (don’t even get me started on the puppy….ugh). AND NOW I’m trying to watch Game of Thrones all while writing about these uber fabulous No Bake Monster Cookie Dough Bites. I’m the kind of person that likes to pack it all in.
The first day of school is a little bittersweet this year because Landon will be in school all day for the very first time. As much as I welcome the little extra time to get things done without constant interruption I’ll miss him so, sooo much. He’s growing up so fast and it makes me want to, even more, make sure he has fun food memories building in his brain. 🙂 So, I plan to greet him each day with a fun snack….but I know that most days he’ll be getting a packet of string cheese and an apple. BUT this week he’ll be getting these No Bake Monster Cookie Dough Bites because I made them for the cooking segment on Fox 29.
These No Bake Monster Cookie Dough Bites are so easy and sooooo good. They’re much like the Oatmeal Raisin Bites I shared with you all last year. They were a huge hit all school year and even made it into my gym bag for a post workout snack. Peanut butter, oats, honey, a bit of water, chocolate chips, M&M’s….you get the picture. Just like everyone’s favorite Monster Cookie but without baking…butter…eggs…sugar…you know, all those things that spike the blood sugar and make the belt just a little tighter. These cookie dough bites have all the flavor without making your pants tight.
And because they’re so easy to make, I whipped up an extra batch to freeze for later….for those times when I only have a packet of string cheese and an apple. But if you’re not much of a peanut butter fan or would just rather satisfy a chocolate craving you have to make these No Bake Fudge Brownie Bites. They’re AMAZING. I’m not even kidding.
No Bake Monster Cookie Dough Bites
- 2 cups Old Fashioned quick oats
- 1 cup creamy peanut butter
- 1/4 cup honey
- 1 tablespoon vanilla extract
- 2 tablespoons water
- 1/2 cup chopped peanuts
- 1/2 cup mini chocolate chips
- 1/2 cup mini M&M's
- In a large bowl, stir together the oats, peanut butter, honey, vanilla and water to combine.
- Fold in the peanuts, chocolate chips and M&M's.
- Roll the dough into balls approximately 1 inch in diameter and place on a parchment lined baking sheet.
- Transfer to the refrigerator and chill for 1 hour.
- Once the balls have set, transfer to an airtight container and store in the refrigerator for up to 2 weeks.
