Baked Chocolate Glazed Donuts 

It’s hard for anyone to deny that donuts are delicious. Along with a hot cup of coffee, they make the sleepiest of mornings better. The problem is they’re usually deep-fried and dense with calories. 

This recipe takes care of that since they’re baked, not fried. But believe me when I tell you they’re no less delicious! Espresso powder helps enhance their rich chocolate flavor without the extra calories. Buttermilk also adds its signature tanginess and lightens up the cake. 

Because they’re baked, they’re also easier to make than traditional donuts. There’s no greasy mess to deal with. Just mix the dry ingredients with the wet, pour it into the molds, and bake! Then you’ll make a quick 2-ingredient ganache to dip them in. Finish them off with some cute sprinkles, and you’re done.

How to Make Them

Prepare your pan. Coat a donut baking pan with cooking spray. 

Combine the dry ingredients. In a large bowl, whisk together the flour, sugar, cocoa, espresso, baking powder, and salt.

Add the wet ingredients. Add the buttermilk, eggs, melted butter, and vanilla to the flour mixture. Whisk just until combined. The mixture should look smooth.

Fill the donut pan. Fill each donut well ⅔ full with batter. You can use a piping bag for better control. 

Bake. Bake donuts for 8 to 9 minutes in a preheated oven at 425°F. The top should spring back when touched. 

Cool. Let the donuts cool in the pan for 4 to 5 minutes before removing them to a wire rack.

Make the icing. As the donuts cool, heat the heavy cream in a small saucepan. Bring just to a simmer (do not boil), then turn off the heat. Add the chocolate to the cream, then stir until melted and smooth. 

Dip and decorate. Dip the top of each donut in glaze to coat it. Then, decorate with your sprinkles of choice.

Tips & Tricks 

  • Switch up the flavor of the glaze by using milk or dark chocolate instead of semi-sweet.
  • For the best results, place the just-glazed donuts on a cooling rack over a sheet pan. This allows any extra glaze to drip off, so they look nice and neat.
  • Some toppings you could use include: 
    • rainbow sprinkles 
    • chocolate sprinkles
    • specialty sprinkles in seasonal shapes and colors
    • chopped nuts
    • edible flower petals
    • white chocolate drizzle

Serving Suggestions

How long do these donuts last?

Once glazed, these donuts taste best the day they’re made. But you can store them in an airtight container in the refrigerator to make them last longer, about 3 days. 

Is it possible to freeze these donuts? 

It’s best to freeze unglazed donuts. Freeze them in an airtight container with layers of waxed paper between them. They’ll last about 3 months. Bring them back to room temperature before coating them with ganache glaze.
