Easy Fat Free Peach Smoothie Pops
I’m not kidding when I say these are easy. Sometimes you just need to know there’s a healthy snack right at your fingertips….or at the very least, a short walk to the freezer. The one thing about warmer weather is you are always VERY aware of the shape (or lack of shape) your body is in.
Shorts and I are not close friends. I always dread when the weather is so warm that the only way to be comfortable is to wiggle into a pair. After some time I just get over it, but the first few days I feel like everyone’s eyes are peeled on my thighs. I know they’re not but trying to reason with myself while wearing shorts for the first time that season is pointless.
In the end, it’s nothing really….and a few extra minutes (several, actually) running always helps to firm things up. Laying off the french fries and chocolate shakes can lend a hand too but do I really want to do that?
So, knowing I would be skulking around in a pair of shorts very soon I thought I would stock the freezer with some healthy treats for my weak moments. I love smoothies and popsicles, so I made the two into one. A smoothie popsicle. And peaches are not quite in season yet…if you have them, great…if not, I used frozen. They tasted pretty much the same as fresh and were easier since there was no peeling or slicing involved. This recipe is four ingredients….FOUR! How could you resist.
Easy Peach Smoothie Pops
Makes 10 popsicles
2 cups 0% vanilla Greek yogurt (I used Chobani)
2 cups fresh (or frozen) peaches, peeled and sliced
2 tablespoons honey
1 tablespoon vanilla bean paste or vanilla extract
In the bowl of a food processor (or you can use a blender), add all ingredients and pulse until the peaches are in small chunks. Pour the mixture into popsicle molds or you can use paper cups. Add the popsicle sticks to the molds and freeze for 3 hours. (if using paper cups, freeze for 30-45 minutes before adding the sticks)
Remove the popsicles from the molds and wrap individually in plastic wrap. Store in the freezer.
