Frozen Mudslide Ice Cream Pie

When I was little, we used to go to a restaurant that served boozy milkshakes that looked sooooo good. My mom used to get a Frozen Mudslide and I remember it being served in a tall daiquiri style glass with chocolate sauce dripping down the sides and a tower of whipped cream on top. I wanted a sip so badly but I was always rejected because it was for adults. So not fair.

Now that I’m older I’m making Frozen Mudslides in every form, including this easy Ice Cream Pie! It’s made with your favorite homemade or store-bought ice cream. And the best part, it’s non-alcoholic so the little guys can partake in a piece of ice cream pie, too!

What is a Mudslide?

The Mudslide drink is a dessert cocktail made with vodka, coffee liquor and Irish cream that’s a twist on the White Russian.

It can be served up frozen or like a regular cocktail but it’s way more fun frozen like a boozy milkshake.

Ingredients You Will Need

You can easily blend your ice cream to make this a boozy pie but know it will be a little softer than if you leave it out.

I like to use my homemade coffee ice cream but your favorite store brand will work well, too.

Butter

Hot Fudge Sauce

Heavy Cream

Vanilla

Chocolate Covered Espresso Beans

How do you make a Mudslide Ice Cream Pie?

This Frozen Mudslide Pie doesn’t have any alcohol in it and is made with just a few simple ingredients. The cookie crust is pressed into the pie plate and then coated with hot fudge sauce. Softened coffee ice cream is smoothed over top and then piled high with whipped cream.

Making an ice cream pie in the summer is one of my favorite things to do because it’s easy to prepare in advance for parties and certainly beats dipping ice cream for several guests. I also love this Strawberry Ice Cream Cake. It’s just as easy but takes a bit more time because of all the layers.

Or you can impress your guests with these Ricotta Ice Cream Stuffed Cannoli. They look totally fancy but they’re soooo, sooo easy to make. And the ice cream is light, creamy and totally amazing.

Easy to make no bake Frozen Mudslide Pie is the best summer dessert ever made!

Ingredients

  • 9 ounces chocolate wafer cookies
  • 4 tablespoons butter, melted
  • 8 ounces hot fudge sauce
  • 1 1/2 quarts coffee ice cream, softened
  • 1/4 cup powdered sugar
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup chocolate covered espresso beans, roughly chopped
  • 1/2 cup chocolate syrup

Instructions 

  • Add the chocolate wafer cookies to the bowl of a food processor. Pulse until a fine crumb forms. Transfer to a bowl. (Alternatively, you can add the cookies to a zip top bag and crush with a rolling pin.)
  • Add the melted butter to the cookie crumbs and stir to combine.
  • Press the cookie crumb mixture into a deep dish 9 inch pie plate to coat the bottom and up the sides. Transfer to the freezer for 5 minutes.
  • Remove the pie plate from the freezer and coat the bottom of the crust with the fudge sauce spreading to form an even layer.
  • Pour the ice cream into the pie crust smoothing the top evenly. Transfer to the freezer for 15 minutes.
  • While the pie sets, add the confectioners sugar, cream and vanilla to a bowl. Beat the mixture with a hand mixer until stiff peaks form. 
  • Top the pie with the whipped cream. Drizzle the chocolate syrup over the pie and sprinkle with the espresso beans.
  • Transfer the pie to the freezer and freeze for 90 minutes or overnight. 
  • Before serving, allow the pie to sit at room temperature for 10-15 minutes. Serve with extra chocolate syrup, if desired.
