Soooooo, today’s my birthday. It’s a big one….to me, anyway. My daughter will disagree with me when I say that but the number has me a little freaked out. We won’t talk about it….what we will talk about today are all the things I want to share with the world that I learned in my lifetime…..like a nice person isn’t necessarily a “kind” person. You can be nice….and not be kind. Just because someone calls themselves your friend doesn’t really mean they will treat you that way. Be cautious with whom you share your secrets with because some “friends” will steal your recipe, your pride or your heart. And how politics suck so much I’d rather watch “Friends” for hours on end to try and get away from the incessant noise. That it’s important to move every single day….in some form….run, walk, ride a bike, ride a whale…just get out and make your heart pump just a bit more so that you can live a long life. How life isn’t necessarily fair to most people and you should always, always expect that everyone has something not so fun going on in their lives. Smile at strangers…even if they scowl back at you, they may remember your smile later and smile back, even though you can’t see them. Water that doesn’t freeze in a water bottle when left in below freezing temperatures is probably not fit to drink. I could go on and on. But that’s a post for another day.

For now…..we’re going to toast my big day and these chilly temperatures with my new favorite recipe…..Funfetti Birthday Cake White Hot Chocolate. It’s a mouthful but I think this over the top drink needs an over the top name. This recipe was created because I originally wanted to make a Birthday Cake Protein Shake or some type of Funfetti Smoothie but as the day got closer I decided to throw all the healthy out the window and sugar myself up. You only get one birthday a year….and that’s not the day to count calories, macros, micros, carbs…whatever you’re counting you can now take a day off. It’s cake time.

To decorate this Funfetti Birthday Cake White Hot Chocolate recipe I coated the rim with a healthy spread of THIS buttercream frosting. You can totally use a canned frosting if you’d like….I’d probably do that in the future because if I’m not baking a cake…chances are I’m not going to have leftover frosting lying around. You dig? Next, I dipped the rims in a bowl filled with sprinkles. Because sprinkles are awesome and winter is not. Then, I brought a saucepan of milk to a simmer, stirred in chopped white chocolate, a bit of vanilla and a splash of almond extract. I’m not kidding when I say this tastes like liquid vanilla birthday cake.

To serve….pour into your mugs, top with whipped cream and….you guessed it…more sprinkles! You can even go the extra step and make mini cupcake stirs with a store-bought cupcake and some fun paper straws. OR serve for breakfast and use these Funfetti Coffee Cake Muffins! Holy brunch goals, right there? Agree? And if you’re really here thinking that this post was going to guide you to a really amazing birthday cake….well, this is the one. I made this for my son’s fifth birthday and it was gone in minutes. Simply amazing. So….Happy Birthday to me today! I leave you with one more life tip….never say no to a mid afternoon nap. Celebrate a birthday every day with this Birthday Cake White Hot Chocolate!

Ingredients

  • 4 cups low fat milk
  • 6 ounces good quality white chocolate, chopped
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 4 tablespoons buttercream frosting
  • sprinkles for garnish
  • whipped cream

Instructions 

  • In a small saucepan, bring the milk to a simmer over low heat. Stir in the chocolate and cook until melted.
  • Stir in the vanilla and almond extract. Continue to simmer for 3-4 minutes.
  • Spread the buttercream frosting around the rims of four mugs. 
  • Fill a shallow bowl with sprinkles and dip the rims into the sprinkles to coat.
  • Divide the hot chocolate evenly among the four mugs and top with whipped cream. Decorate with more sprinkles, if desired.
