Mocha Brownie and Mint M&M Cookies

Day 5 of the Twelve Days of Cookies and a little philanthropy!

This year, The Suburban Soapbox was selected to participate in The Great Food Blogger Cookie Swap!  The cookie swap is organized by Lindsay of the blog Love and Olive Oil and Julie from The Little Kitchen.  I’ve been a fan of both of their sites so I was super excited to be able to join the other bloggers in the largest cookie swap I’ve ever been a part of. And most importantly, this amazing project raised $13,778.40 for Cookies for Kids’ Cancer!!!

Here’s how it worked:  Lindsay and Julie sent out emails to all 600+ participating bloggers with the names of three people.  We, then, had to create, bake and send 1 dozen cookies to each of them.  And then today….EVERYONE will be posting their amazing creations on their blog.

I received cookies from three amazing bloggers: Live Bake Love, West Street Story and The Chef Next Door.

The Chef Next Door sent Southern Tea Cakes, a recipe from her grandmother.  They were similar to a sugar cookie but a little lighter than what I normally make.  They were so buttery with thin crispy edges….Landon ate almost the entire tin.

West Street Story sent Molasses Cookies, which were huge!  I have had Molasses Cookies before but these were so soft and chewy and perfect.  The recipe is one her husband’s late grandmother left behind and she even included a copy of the handwritten recipe.  I loved it!

Live Bake Love made the most amazing Vanilla Bean Shortbread Cookies……..with Salted Dulce de Leche Filling!  All I could say was “Wow”.  And then I proceeded to eat another one….face stuffing had begun.  I shared one.  Just one. I would like to sit in a bowl of the Salted Dulce de Leche filling with a spoon.

The cookie I created was developed from my best friend’s brownie recipe.  I used the brownie recipe in my Chocolate Chip Cookie Mocha Brownie Bites for the first day of cookies.  For this recipe, I turned that brownie into a cookie…and then added the Holiday Mint M&M’s.  These cookies taste just like the top layer of a fudge brownie….the best part, the crispy, flaky top.  And the mint reminded us of a Peppermint Patty!  You can leave out the M&M’s or substitute with nuts.  These cookies are also ridiculously addictive with chocolate chips!

Mocha Brownie and Mint M&M Cookies

Makes 36 cookies

1/2 cup canola oil

1/2 cup unsalted butter, room temperature

2 cups granulated sugar

3 large eggs, room temperature

2 teaspoons vanilla extract

6 tablespoons brewed coffee

1 1/2 cups all purpose flour

1/2 tablespoon baking soda

1 tablespoon baking powder

2/3 cup cocoa powder

1/2 teaspoon kosher salt

9.9 ounces (1 package) M&M’s (I used Holiday Mint)

Preheat oven to 325 degrees.

In the bowl of an electric mixer, beat together the oil, butter and sugar until creamy and smooth.  Add the eggs one at a time until thoroughly combined after each addition.  Mix in the vanilla and coffee.

In a large bowl, whisk together the flour, baking soda, baking powder, cocoa powder and salt.  Slowly add the flour mixture to the egg mixture and continue beating on low until a dough forms.

Turn off the mixer and stir in the M&M’s to combine.

On a baking sheet lined with parchment paper, place the dough in heaping teaspoon dollops approximately 3 inches apart. (These spread a lot!)  Bake for 12-15 minutes or until browned around the edges.  Bake for less time for a softer cookie.

Remove from oven and let cook on baking sheet for 2 minutes.  Transfer to a cooling rack and cool completely.  Store in an airtight container at room temperature.
