I hope everyone had a wonderful holiday weekend!  It blew by so quickly I can’t believe it’s over.  I have the post holiday blues now and wish it was socially acceptable to leave all my Christmas decorations up until spring. For no other reason than they are beautiful and festive and once I take them down the gray winter days just loom….long and dark and dreary. And cold. And I’m going to watch Christmas vacation one more time before they stop airing it because we now have to wait 363 days until next Christmas. So depressing.

But we are putting in a pool and I’m ready for healthy eating next week to get ready for that bathing suit situation….but first let’s squeeze in a few more festive dishes because we do have New Year’s right around the corner.  We don’t do much for New Year’s Eve…I used to go out with friends pre-kids…then we had a few parties when Katie was little but those hanger outters….you know what I mean. The people that stick around until the wee hours of the morning and you just can’t get them to take the hint that it’s time to go even though you’re snoring on the living room floor. So, this year, we’re going to a neighbor’s for a few cocktails then coming home at a sensible hour to be in bed by 10. 🙂 Now, that’s living on the edge.  But New Year’s Day we hang out at home and have a family brunch with things like hash brown casserole, pomegranate Bellini and this Spiced Pear Dutch Baby.  Easy, light dishes that won’t weigh us down so we have room for all that pork and sauerkraut later in the day.

This Spiced Pear Dutch Baby recipe couldn’t be easier to make.  You whip up all the batter ingredients in the blender until smooth then pour it into a screaming hot skillet before baking until puffed and golden. It’s really a miraculous thing to make and pretty stunning to boot. Perfect for hosting overnight guests because it’s so simple to make.

While it’s baking, you can sauté your Harry & David pears in a bit of butter, brown sugar and spices until softened.  My favorite Royal Riviera Pears are already buttery and juicy on their own but once they’re mixed together with all the other ingredients they become even more miraculous than ever. They are so amazingly tasty you may want to make extra because I tend to eat them before the Dutch Baby is done baking. Then I have to make more and it’s such a process…..so just plan ahead and make extra. Once your Dutch Baby is out of the oven, top it with your pears and serve it right out of the skillet. Spoon a dollop of whipped cream or vanilla ice cream on top and you have one jaw dropping brunch dish!
