Dan Dan Noodles

Chinese take out is one of our favorite things in this house. I love the noodle dishes the most and usually can slurp up a whole “serving” all on my own….now, a whole serving of take out is REALLY like 5 servings. But those noodles….they get me every time. Every.Single.Time.

Especially if they’re spicy, like these Singapore Noodles which are easy to whip up with leftover pork chops. The only thing better than my favorite Singapore Mei Fun are Dan Dan Noodles, also known as Dan Dan Mian,……and I can’t believe how easy they are to make

What Are Dan Dan Noodles

Dan Dan Noodles, or Dan Dan Mian, are one of the most popular Sichuan street foods. Made of boiled egg noodles that are then tossed in a spicy sauce usually containing preserved vegetables, chili oil, Sichuan pepper, minced pork, and scallions. 

The noodles can be served dry, as we did here, or served with more sauce to make them more of a spicy soup or Hot Pot.

I’m a huge fan of Chinese cuisine, so I decided to work on perfecting my recipe…and how perfect it has become. I love the noodles that they serve at one of our favorite authentic Chinese restaurant, Han Dynasty, so I decided to recreate that dish the best I could.

You can also order Dan Dan Noodles at PF Chang’s but I love the version at our local restaurant much more.

Loaded with spicy flavor from chili oil and Sichuan peppercorn oil, these noodles are not boring in the least. The crumbled, brown pork and kimchi are the perfect match for the creamy sauce….this dish is heavenly.

And the perfect “noodle” dish for Chinese New Year! Long noodles are symbolic of a long life and a staple (so, I’ve read) at Chinese New Year celebrations.

Do Dan Dan Noodles Contain Meat

Traditionally, a Dan Dan Noodle recipe does contain pork BUT you could make them without the pork if you want a more vegetarian dish. But, let me say, that I’m not sure they’re still Dan Dan Noodles…..but they’re still very good!

So, keep the pork, leave it out…you do you here.

What To Serve With Dan Dan Noodles

To us, these noodles are kind of a meal all by themselves but if you want to add something along with your carb-y goodness we do like to serve alongside these Asian Glazed Chicken Legs (they’re super easy to make!) or a pile of these Spicy Asian Chicken Wings.

If you want to add a salad for some freshness, it’s not traditional, but we love this Asian Ramen Noodle Salad. It’s fresh, light and easy….and a hit with the kids, too!

Not traditional, but we also love to add a side of spicy Cucumber Kimchi for a light, fresh flavor.

Ingredients

  • 2 1/2 tablespoons vegetable oil, divided
  • 5 ounces ground pork
  • 1 tablespoon minced garlic
  • 2 tablespoons Kimchi, chopped
  • 1/3 cup soy sauce, divided
  • 2 tablespoons sesame paste
  • 2 tablespoons water
  • 1 1/2 tablespoons chile oil
  • 1/2 tablespoon Szechuan peppercorn oil, available at Asian markets
  • 2 1/2 tablespoons granulated sugar
  • 4 cups flour noodles

Equipment

  • 1 wok

Instructions 

  • In a large skillet over high heat, heat 1/2 tablespoon vegetable oil. Add the pork, cooking until brown and crumbly. Add the garlic, kimchi and 1/2 tablespoon soy sauce. Remove from the heat.
  • In a bowl, whisk together remaining 2 tablespoons vegetable oil, sesame paste, remaining 1/3 cup soy sauce, water, chile oil, peppercorn oil, and sugar, and whisk thick and creamy.
  • Cook flour noodles according to the package instructions.
  • Pour the sauce into an empty serving bowl, add the cooked noodles, and top with ground pork. Toss and serve.
