Somewhere, somehow, I stumbled upon a tip claiming to be the best way to make a crispy and golden grilled cheese.  I remember reading this was “what the pro’s do” and frankly, when I saw the secret ingredient I was a little skeptical.  Mayonnaise.  REALLY?  I was apprehensive but I’ll try anything once. So, I gave it a whirl.

It was dreamy… a grilled cheese sandwich should be.  Crunchy, golden brown exterior….melty, smooth, gooey interior.  (I used my husband as a guinea pig before I made my sandwich….you know, just in case.)

When making your sandwich, assemble as usual making sure not to skimp on the cheese and other ingredients…of course.  Slather the outside of the sandwich with mayonnaise being sure to cover the entire surface of the bread and grill over med-low heat in a lightly greased pan. (I used butter for his sandwich and nothing for mine….use BUTTER.)  It should take approximately 4 minutes on each side or until the bread is golden brown.  I cover my pan during the cooking process to make sure the cheese is completely melted.

This is the only way I’ll make a grilled cheese sandwich again….who knew mayo could be so versatile!
