Ingredients
8Open Nature Lamb Loin Chops
1cupOpen Nature Balsamic Vinaigrette
1cupOpen Nature Plain Greek Yogurt
4ouncesO Organics® Garlic & Herb Goat Cheese
1tablespoonApple Cider Vinegar
1teaspoonhoney
salt and pepperto taste.
Instructions
Place the Lamb Loin Chops in a large zip top bag or shallow dish. Pour the vinaigrette over the lamb chops and allow to marinate for 4 hours or overnight.
Heat a gas grill on high.
Remove the lamb chops from the marinade and place on the grill. (discard the remaining marinade). Grill the lamb chops for 4 minutes, then flip and continue grilling for an additional 4 minutes or until an instant read thermometer reads 145 degrees for medium rare. (Or 160 degrees for medium, 170 degrees for well done.)
Transfer the lamb chops to a platter and allow to rest for 10 minutes.
While the lamb chops are resting, make the sauce. Place the yogurt, cheese, vinegar and honey in the bowl of a food processor or blender and puree until smooth. Season with salt and pepper, to taste.
