  • 8 large shrimp shelled and deveined
  • 8 ounces coconut milk
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup panko bread
  • 1/2 teaspoon cayenner pepper
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon fresh ground pepper
  • 1/2 cup orange marmalade
  • 1 tablespoon honey
  • 1 teaspoon mustard
  • 1/4 teaspoon hot sauce
  1. Clean the shrimp and set aside.
  2. In a small bowl, whisk the coconut milk and season with salt and pepper. Set aside. In a separate small bowl, whisk together the coconut, panko, cayenne pepper, salt and pepper.
  3. One at a time, dip the shrimp in the coconut milk, the panko and then place in the basket of the fryer. Repeat until all the shrimp are coated. Cook the shrimp in the fryer for 20 minutes at 350 degrees or until the shrimp are cooked through.
  4. While the shrimp are cooking, whisk together the marmalade, honey, mustard and hot sauce.
  5. Serve the shrimp with the sauce immediately.
