Ingredients
1bag Alexia Sweet Potato Fries with Sea Salt
2tablespoonsduck fator unsalted butter
2tablespoonscornstarch
1 1/2cupsbeef stock
1duck leg confityou can purchase these at most grocery stores
1teaspoonsgarlic powderdivided
1/2teaspoonchili powder
2tablespoonsunsalted butter
1tablespooncornstarch
1 1/2cups2% milk
1cupshredded smoked gouda
kosher salt and pepper
Instructions
Preheat oven to 450 degrees.
In a medium sauce pan, melt the duck fat over med-high heat. Whisk in the cornstarch and cook until golden in color. Slowly whisk in the beef stock and cook until slightly thickened. Turn the heat to low. Shred the duck leg and stir into the gravy. Add the 1/2 teaspoon garlic powder and chili powder stirring to combine. Season with salt and pepper to taste. Remove from the heat, cover and set aside.
In a small saucepan, melt the butter over med-high heat. Whisk in the cornstarch and cook until golden brown. Slowly whisk in the milk and cook until slightly thickened. Turn the heat to low and stir in the cheese. Add the remaining garlic powder and season with salt and pepper to taste. Continue stirring until smooth. Cover and keep warm until ready to use.
Place a wire cooling rack over a foil lined baking sheet and spread the fries in one layer. Bake the fries for 10-15 minutes or until crispy.
Place the fries in a big bowl and top with the duck confit gravy. Spoon the cheese sauce over the fries and serve immediately.
