1tablespoonolive oil
1 1/2cupsdiced onion
1cupbutton mushroomsfinely chopped (almost to a minuscule size)
1cupmatchstick carrotschopped
3garlic clovesminced
1tablespoonHerbs De Provence
2tablespoonsWorcestershire sauce
3tablespoonstomato paste
3/4cupRolled OatsI use Bob's Red Mill
2tablespoonsfresh chopped parsley
1egglightly beaten
1poundground turkeynot extra lean
1/2teaspoonof salt and pepper
1/2cupketchup
1/2cupcider vinegar
2/3cupbrown sugar
Instructions
In a small saute pan, heat the olive oil over med-high heat. Add the onions and saute for approximately 2 minutes or until they begin to soften. Add the mushrooms to the pan and continue to saute for another 2 minutes stirring occasionally. Add the carrot, garlic and herbs de provence cooking for another minute.
Stir in the Worcestershire sauce and tomato paste continuing to cook for another minute. Remove from the heat. Cool completely.
In a medium bowl, mix the ground turkey, onion mixture, egg, oats, parsley, salt and pepper together being careful not to over mix.
Form the mixture into a "loaf" in a baking dish. (I use a stone deep dish pie plate because I feel this distributes the heat perfectly.) Set aside.
In a small bowl, whisk together the ketchup, cider vinegar and brown sugar. Spoon the glaze over the meatloaf until completely covered.
Bake in a 450 degree oven for 30 minutes. Spoon more of the glaze over the meatloaf to coat and cook for another 10-15 minutes.
When done, remove from the oven, cover with foil and let rest for 10 minutes before slicing.
