  • 1/4 cup pitted kalamata olives
  • 2 ounces feta cheese
  • 1 garlic clove
  • 1/2 cup red wine vinegar
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon fresh chopped oregano
  • zest and juice of 1 lemon
  • 3/4 cup extra virgin olive oil
  • kosher salt and fresh ground pepper
  1. In the bowl of a mini food processor or blender, add the olives, cheese and garlic. Process until a thick paste forms.
  2. Transfer the olive mixture to a bowl. Whisk in the vinegar, basil, oregano, lemon zest and juice to combine.
  3. Whisking vigorously, slowly stream in the olive oil and whisk together with the vinegar/olive mixture until thoroughly combined. 
  4. Serve immediately or cover and refrigerate until ready to use.
