Ingredients

english cucumber
cut in half and sliced

pint
grape tomatoes

yellow bell pepper
large dice
1/2
red onion
large dice

feta cheese cut into bite sized pieces

whole pitted Kalamata olives
Juice of one lemon and zest

tablespoon
dried oregano
1
tablespoon
whole grain mustard

cup
extra virgin olive oil
Instructions
In a small bowl, mix together lemon juice, zest, oregano and mustard.
While whisking constantly, drizzle in olive oil until thoroughly blended. Set aside.
In a large bowl, combine all ingredients (cucumber through olives).
Pour dressing over salad and toss. Season with salt and pepper, to taste.
Notes
Salad can be made up to 24 hours in advance and stored in the refrigerator in an airtight container.
