Ingredients

long grain white rice

Chopped fresh cilantro
Instructions
Rinse the rice in a fine mesh sieve until the water runs clear. Drain and set aside.
In a medium saucepan, bring the water and salt to a boil over medium-high heat.
Add the rice to the water. Stir in the juice and zest of one lime.
Cover the saucepan with a tight fitting lid and turn the heat to low. Cook the rice for 18-20 minutes or until the rice has absorbed the water.
Remove the rice from the heat and allow to rest for 10 minutes.
Uncover the rice. Stir in the remaining lime juice, zest and all the cilantro. Fluff with a fork and serve.
Notes
Rice can be made up to 5 days in advance and stored in an airtight container in the refrigerator.
