2tablespoonsbutter
1/4cupchopped onion
1/4cupchopped red bell pepper
1/4cupchopped green bell pepper
1/2cupdiced ham steak
4large eggs
2tablespoonswhole milk
1/2cupshredded sharp cheddar cheese
Salt and pepperto taste
Instructions
Heat the butter in an 8 inch skillet over medium heat.
Add the onion and peppers to the skillet. Cook until beginning to soften, approximately 2-3 minutes.
Stir in the ham and cook for an additional 1-2 minutes.
Remove from the pan and keep warm.
Whisk the eggs and milk together until combined.
Pour half the eggs into the skillet and cook over medium heat. Swirl the eggs around until it’s evenly distributed and turn the heat to low.
Cook the eggs for 2-3 minutes until beginning to set.
Sprinkle half the onions, bell peppers and ham evenly on one side of the eggs. Top with half the cheese and fold the omelette closed by lifting the uncovered side up and over the covered half of the omelette.
Slide the omelette onto a plate and repeat with the remaining ingredients.
Serve immediately.
Notes
Omelettes are best served soon after cooking. To prep ahead, you can dice up your vegetables and ham to store in the refrigerator in an airtight container for up to 2 days.
