Ingredients
4zucchinihalved lengthwise (medium sized work best)
1 1/2cupspizza sauce or marinara sauce
2 1/2cupsshredded mozzarella
1cupdiced pepperoni
1/2cupcookedcrumbled sausage
1/2cupsliced black olives
1/4cupfine diced bell peppers
1/4cupfine diced red onion
1tablespoonpizza seasoning
Grated parmesan cheese and crushed red pepperoptional
Instructions
Preheat oven to 350˚F.
Cut the zucchini in half lengthwise and scoop out the seeds with a spoon.
Arrange the zucchini cut side up on a baking sheet and spoon the sauce over the top filling the cavity where the seeds were with the sauce.
Sprinkle the mozzarella over the sauce and top with the pizza toppings.
Bake the zucchini until tender and cheese is melted, approximately 15 minutes.
Season with the pizza seasoning.
Serve with grated parmesan cheese and crushed red pepper, if desired.
Notes
To lower the fat, eliminate the sausage and pepperoni.You can prep ahead up to 24 hours in advance. Store in the refrigerator covered with plastic wrap or store in an airtight container.
