butternut squash
peeled, seeded and cut into 1/2 inch pieces

olive oil
Kosher salt and ground pepper
Instructions
Preheat oven to 425˚F.
Arrange the squash on a baking sheet in a single layer.
Drizzle with olive oil tossing to coat.
Season with salt and pepper.
Roast in the oven until tender and caramelized, approximately 25 to 30 minutes.
Notes
Butternut squash is great tossed into a salad or stirred into pasta for a little sweet and caramelized flavor.
