Ingredients
1poundbow tie pasta
2boneless, skinless Chicken Breasts
1tablespoonolive oil
1teaspoongarlic powder
1teaspoonItalian Seasoning
1/2teaspoonkosher salt
1/2teaspoonground pepper
3cupscoarsely chopped tuscan kalestems removed
2cupscherry tomatoeshalved
1cuproasted garlic clovesoptional
1 1/2cupscroutons
1 3/4cupscaesar salad dressing
1/2cupparmesan cheese
Instructions
Bring a large pot of generously salted water to a boil over medium high heat.
Add the pasta and cook just until al dente, approximately 8-10 minutes.
Drain the pasta and rinse with cool water to stop the cooking process. Set aside.
Drizzle the chicken breasts with olive oil. In a small bowl, whisk together the garlic powder, seasoning, salt and pepper. Season both sides of the chicken breasts with the seasoning mixture.
Preheat a large nonstick skillet, or grill, over medium high heat.
Add the chicken to the skillet and cook for 4-5 minutes. Flip the chicken and continue cooking until the chicken is golden brown and cooked through. Set aside and rest the chicken for 10 minutes.
Cut the chicken into bite sized pieces and allow to come to room temperature.
In a large bowl, add the pasta, kale, tomatoes, garlic and chicken. Toss to combine.
Add the croutons and salad dressing, tossing to coat.
Sprinkle with parmesan cheese and serve immediately.
Notes
If making in advance, do not add the croutons or the parmesan cheese until right before serving. Toss the salad with 1/2 the dressing and save the rest for right before serving.
