Taco Casserole Recipe
Taco Casserole is made with layers of taco beef, refried beans and tortilla chips then baked under a blanket of cheese. A weeknight family favorite dinner.

packet taco seasoning

crushed tortilla chips

can refried beans

shredded cheddar cheese
Toppings
shredded lettuce, sliced tomatoes, olives, cilantro, cotija cheese
Instructions
Preheat oven to 350˚F. Coat a 2 quart baking dish with cooking spray
Heat the olive oil in a large skillet over medium high heat.
Add the ground beef and cook until browned, approximately 5-6 minutes, breaking it up with a wooden spoon while cooking.
Transfer the meat to a bowl with a slotted spoon and drain off all but 2 tablespoons fat.
REturn the skillet to the heat and add the onion, bell pepper. Cook until the vegetables are softened. Stir in the garlic and cook for 1 minute.
Add the black beans, green chiles, taco seasoning and salsa. Cook for 2-3 minutes longer.
Remove from heat and stir in the ground beef. Set aside.
Layer the tortilla chips in the bottom of the baking dish and spread the refried beans on top.
Top the beans with the beef mixture and sprinkle with the cheddar cheese.
Bake in the oven for 15-20 minutes or until the cheese is melted.
Top with the toppings and serve.
