Ingredients
2cupscooked chicken breastroughly chopped
1/4cupfinely diced carrot
1/4cupfinely diced celery
2tablespoonsfinely diced red onion
1tablespoonfresh lemon zest
2tablespoonsfresh lemon juice
2tablespoonsfresh chopped parsley
4tablespoonsmayonnaise
1/8teaspoonkosher salt
1/8teaspoonfresh ground pepper
Instructions
Place the chicken in a medium bowl and break up with a fork until finely shredded. (You can also do this in a mini food processor.)
Add the carrot, celery, onion, lemon zest, juice, parsley and mayonnaise to the shredded chicken. Stir to combine thoroughly.
Season with salt and pepper.
Serve immediately or cover tightly and store in the refrigerator for up to 4 days.
