Ingredients
1head romaineroughly chopped
1head iceberg lettuceroughly chopped
15ouncecan garbanzo beansdrained and rinsed
4ouncesItalian Salamichopped
1cupshredded mozzarella cheese
For the dressing
2tablespoonsred wine vinegar
1tablespoondijon mustard
1/2teaspoonkosher salt
1/4teaspoonblack pepper
1/4cupolive oil
1/4cupgrated pecorino romano cheeseplus more for garnish
Instructions
Arrange the lettuce, beans, salami and cheese in a large bowl. Set aside.
Whisk together the vinegar, mustard, salt and pepper. Drizzle the olive oil into the dressing slowly while continuing to whisk. Stir in the cheese.
Drizzle the dressing over the salad and toss to coat.
